May is National Salad Month. What better way to bring in the summer than with fresh salads!  They are refreshing and packed full of flavors!  This Chopped Greek Salad has that extra crunch in each bite and is topped with a lighter dressing with so much flavor!

Greek Salad is one of those salads for a long time I never made at home.  I always ordered it out.  But what salad is harder to make than the other really? You chop up some greens and some veggies, blend your dressing and add a little cheesy greatness (life cannot exist without cheese, right?)!!

The nice thing about salads is they are versatile, you can change the ingredients and you have a new meal each time!  Salads don’t have to be boring ya’ll! From all the leafy green choices, to adding in a variety of veggies, protein, and cheesy goodness! Then top it off with a delicious dressing!

Not to mention all the Sunday Dinner Salads my #SundaySupper friends have created below.  Enough to last you all summer long and you will never run out of ideas and yumminess!

This Chopped Greek Salad is a great meatless option.  Although, we have a place in my town that always serves ham on theirs (I know I diverted here – not sure why?) I guess to say, you could add ham, grilled chicken or your fav protein to this, if you wanted to meat this salad up!  I love it just like this! 🙂

The dressing is very simple and “lite”,  but  just flavors it perfectly. Now, I am adding in a great big scoop of Greek Potato Salad, you might not call that part “lite”, but without it you might as well be eating peanut butter without strawberry jelly! You know boring! 😉

 Chopped Greek Salad Ingredients

Chop up your lettuce, cucumbers and green bell peppers.  In a bowl toss them together and on top of a scoop of potato salad.

Greek Potato Salad.Then arrange the tomatoes, olives, peppers, radishes, and onions around the outside of the salad. Top with beets,  olives, and a pepper . When ready to serve drizzle dressing on top.  To Make dressing mix olive oil, white vinegar, oregano, and salt & pepper to taste.

Chopped Greek Salad

 This Chopped Greek Salad has that extra crunch in each bite and is topped with a lighter dressing with so much flavor!

Ingredients 

  • 1 large head of lettuce, chopped
  • ½ head green leafy lettuce, chopped
  • 1 green bell pepper, diced
  • 1 peeled cucumber, diced
  • 2 to matoes, cut into quarters
  • 6 ounces feta cheese, chopped
  • 4 slices canned cooked beets
  • Kalamata or greek olives
  • greek peppers
  • 4 or 5 radishes, cut in half
  • 4 whole green onions

Salad Dressing

  • ½ cup olive oil
  • ¾ cup distilled white vinegar
  • 1 teaspoon Oregano
  • sea salt and pepper to taste

Instructions

  • Place 2 to 3 cups of the Greek Potato Salad in a mound in the center of the platter.
  • In a bowl or dressing bottle mix olive oil, white vinegar, oregano, and salt & pepper.
  • Chop lettuce, green pepper, and cucumber and mix together in a bowl. Top potato salad with the salad mixture.
  • Place the tomato wedges, Greek peppers, olives, radishes and green onion around the outer edge of salad.
  • Top salad with feta, sliced beets, olives, and Greek pepper.
  • When ready to serve drizzle with dressing.

  2. Mmmm!!! I’ve been trying to incorporate more salads into my diet, and this one looks absolutely perfect! I loooooove beets, but have yet to have them on a salad! :O Think it’s about time to change that – thanks for sharing <3

  4. I reread the recipe several times and I don’t see how much olive oil to combine with the 3/4 cup distilled white vinegar.
    The recipe looks great.

  6. I so love that you put the potato salad on your Greek salad. Every time we went to FL to see my in laws we would go to Tarpon Springs to a Greek restaurant there and share a huge salad like this. Everyone loves it so much we have even tried to bring some of the potato salad back with us. I can’t wait to try your potato salad recipe too! Delicious!

    1. Thank you Denise! Tarpon Spring has great Greek food. I need to get over there soon. It has been such a long time. The Potato salad is delicious, but the flavors in the Greek Salad combined make it even better. If you make it alone I would add a little oregano to it 🙂 I just love all the fresh veggies this time of year! Let me know what you thing if you make it!
