These Easy Italian Chicken Sausage Sandwiches with Peppers & Onions recipe is almost too easy to even be considered a “RECIPE”! But it’s GOOD YA’LL!

If you are like me weeknights are busy and there can never be enough quick meals tucked away in my recipe box, that taste delicious. Last night was one of those nights! Monday – you know that bad word 😉

As you are firing up the grill this summer season, you can also make this one outdoors too. Just take your supplies to the grill. Use a pan or aluminum foil to cook the peppers on and you are in business.

I have found these great sausages from Boar’s Head (NO they are not paying me to say this, but after my Chicken Sausage & Fig Naan Bites, I think they should 🙂 ) My Bites were made with a Bacon one that is too die for.  I also sampled their buffalo-flavored one. I can’t wait to come up with something for that one.  Be on the lookout!  What I like about them is they have less fat than pork, but truly do not lack in flavor or juiciness!  One thing for sure, ya don’t want to bite into a dry sausage!  Do you agree?

Pan fry with just a drizzle of olive oil, for 5 to 7 minutes, until warmed through!

Italian Chicken Sausage Frying

While the sausages are cooking, I add a little olive oil to a pan and add sliced onions and peppers. Saute for 2 to 3 minutes on medium heat. There are 4 sausages in a pack so gage how many people in your family will eat the peppers and onions! I have two guys that are really boring. So I made a little batch just for me. The recipe will include enough for 4, but you know – ya DO NOT want to waste it.

I pop the Buns in the Oven to Toast up briefly. Just a minute or two! I use my convection toaster oven, because my BIG OVEN is PREHISTORIC and does not have convection and who wants to heat up the whole house when it’s 97 degrees outside!

Easy Italian Chicken Sausage Sandwiches with Peppers and Onions

These Italian Chicken Sausage Sandwiches with Peppers & Onions are a quick and easy meal on a busy weeknight.

Ingredients 

  • 1 Package Italian Chicken Sausage, (4 Links)
  • ½ cup Onions, Sliced
  • 1 cup Sweet Peppers, Sliced
  • Olive Oil, (To Drizzle in Pan)
  • 4 Hot Dog Buns
  • yellow mustard or any other condiments to garnish

Instructions

  • Drizzle skillet with olive oil. Pan fry Chicken Sausage in skillet for 5 to 7 minutes on medium heat.
  • Mean while saute onions and peppers in 1 to 2 teaspoons of olive oil. Cook until slight caramilzed or to your taste.
  • Preheat oven to 400 degrees and toast Hot Dog Buns. Place sausage on bun and top with pepper and onions. 
  • Garnish with yellow mustard or other desired condiments
