Creamy Cucumber and Tomato Salad makes a fantastic summer side dish. Made with crisp cucumber, fresh tomatoes, sweet onion, and tossed in a tangy and creamy dressing. This is a delicious southern classic salad!

You may notice that in my pictures all the onions have disappeared, well actually they never were there. My lovely husband and son will not touch them. You would think by now I would have them trained – lol! Well, that has not happened. Both of them refuse!

So if you like onion please add them and just use your imagination with those pictures, ’cause some onion in this dish tastes amazing! Gives it a little extra bite you will absolutely love!

Why this Salad is Perfect for Spring and Summer

This dish is a simple southern classic that really is perfect when you can get beautiful ripe fresh tomatoes and cucumbers. I feel a little spoiled, because I can usually find them year round in the grocery store. But there is something about this time of year (spring and summer) those ‘maters are extra juicy and delicious!

It’s also on the lite side. Fresh flavors of the bright dill paired with the tangy vinegar and creamy sour cream and mayo leaves your with crisp bites of yum. Now this will go alongside just about anything you want to serve, but if you want to keep it fresh and low carb you could serve it with the Best Marinated Grilled Chicken or these Grilled Sweet and Spicy Mustard Pork Chops and you have a meal.

What you need for Fresh Creamy Cucumber and Tomato Salad

  • Cucumbers
  • Ripe Tomatoes
  • Sweet Onion *optional
  • Mayo
  • Sour Cream
  • Vinegar
  • Salt
  • Pepper
  • Fresh Dill

How to make Southern Creamy Cucumber and Tomato Salad

  1. Chop cucumber and tomatoes into bite size pieces or slices. Place in a large salad bowl.
  2. Add in sliced or chopped onion, if desired, and fresh chopped dill. 
  3. In a bowl or large measuring cup, whisk together mayonnaise, sour cream, vinegar, salt, pepper and dill. Pour over vegetables.
  4. Gently toss to coat. 
  5. Cover with plastic wrap and refrigerate for 30 minutes, gently toss and serve.

Ingredients 

  • 2 medium cucumber
  • 3 medium ripe tomatoes
  • ½ sweet or red onion, (optional)
  • 2 tsp fresh dill, chopped

Creamy Dressing

  • ¼ cup mayonnaise
  • ¼ cup sour cream
  • 1 tablespoon vinegar
  • salt, (to taste)
  • ¼ black pepper, (or to taste)

Instructions

  • Chop cucumber and tomatoes into bite size pieces or slices. Place in a large salad bowl.

Notes

*This is also delicious with 1/2 tsp fresh minced garlic.

    Tasty, light, and refreshing summer side salad. I take care of a disabled wife, work full time and always looking for quick simple recipes for dinner after I come in from work. This tomato and cucumber salad fits the bill perfectly. A nice addition to a slow cooker dinner on any summer evening. Thanks for sharing Nikki.
