White Chicken Chili

Ingredients

  • 1 pound boneless skinless chicken breast, diced into cubes)
  • 1 onion, medium, chopped chopped
  • 1 tablespoon minced garlic
  • 1 tablespoon vegetable oil or olive oil I use olive oil
  • 2 cans 15 1/2 ounce great northern beans
  • 2 cans 4 ounce chopped green chilies (I use only 1 can to cut the heat a little)
  • 1 c an chicken broth or 2 cups
  • 1 teaspoon salt
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1/2 teaspoon pepper I use ground white pepper
  • 1/4 teaspoon cayenne pepper
  • 1 cup sour cream
  • 1/2 cup whipping cream

Instructions

  • In a large saucepan, saute chicken onion and garlic in oil until chicken is done.
  • Add beans, broth, chilies and seasonings and bring to a boil.
  • Reduce heat to medium to medium-low and simmer uncovered for 30 minutes.
  • Remove from heat. Stir in sour cream and whipping cream. Serve immediately
