Cheesy Yellow Squash Casserole
Yellow Squash simply pan fried in butter, mixed with creamy sour cream, cheese, and topped with crunch crackers and more cheese! This truly southern Cheesy Yellow Squash Casserole highlights the summer squash crop in the most delicious way!
Servings: 12 servings
- 5 to 6 medium squash, sliced
- 2 tbsp butter
- salt and pepper to taste
- 3 cups cheddar cheese, shredded divided
- 1 large egg, beaten
- 1 cup sour cream
- 1 sleeve Ritz crackers, crumbled
- 1/4 cup sweet or Vidalia Onion, diced
Preheat oven to 350 degrees. Butter a 3 quart or 9 X 13 dish.
Over medium high heat, melt butter in a skillet. Add sliced squash, salt and pepper and saute, stirring often until tender (about 10 minutes). Drain.
In a bowl, mix egg, sour cream and 1 cup cheese. Fold in cooked squash.
Pour into baking dish. Top with crushed crackers and remaining 2 cups of shredded cheese.
Bake for 20 to 30 minutes or until golden and bubbly.
