No Bean Chili with a little kick

The spices, meat and tomatoes come together to give you a somewhat spicy chili that is perfect for game day or cold days.

Ingredients

  • 3 pounds ground chuck
  • 1 pound ground mild italian sausage
  • ½ cup sweet/yellow onion diced
  • Salt to taste
  • 3 14.5 ounce cans diced organic fire roasted tomatoes I used Muir Glenn with diced green chilies
  • 2 bottles of light beer
  • 4 to 5 cloves of garlic minced
  • 4 to 5 tablespoons of chili powder
  • 4 teaspoons ground coriander
  • 4 teaspoons paprika
  • 2 teaspoons cumin
  • 2 28 ounce cans tomato sauce or whole tomatoes crushed by hand
  • 4 teaspoons of adobo sauce
  • Garlic salt onion powder and cayenne pepper to taste
  • 1 square dark or unsweetened chocolate chopped fine

Instructions

  • Saute ground beef and pork in dutch oven or large pot. Add in salt to taste and onion and cook until done. Drain in colander or on paper towels then add back into pot.
  • Add in beer and let cook 3 to 4 minutes.
  • Add in diced tomatoes, garlic, and other spices. Cook about 10 minutes.
  • Add in tomato sauce, adobo sauce and chocolate.
  • I also added about a tablespoon of garlic salt, and a dash of cayenne pepper to taste.
  • Cook on medium heat on stove top for at least 1 hour. I like to cook for 3 or 4 hours.
  • You can also do this in a crock pot on low all day or on high for 3 or 4 hours. If you use a crock pot, still complet the first two steps. Cook the meat and cook off the beer on stove top first.
  • This is a somewhat spicy chili. It is not crazy hot, but you could use the diced tomatoes without green chilis and cut back on the chili powder to bring down the spice. Remember you can start with less of any of the spices and make it to your taste.
