To make the vinaigrette: Combine all ingredients in a jar with a lid and shake.
⅓ cup avocado oil, ¼ cup red wine vinegar, 1 tablespoon dijon mustard, 4 tablespoons apple butter, 2 tablespoons maple syrup, ½ teaspoon coarse kosher salt, ¼ teaspoon black pepper, pinch of cayenne pepper
Taste and adjust as needed; add a bit more vinegar if you want more zip, or a touch more maple syrup if you prefer sweeter.
