These Breakfast Bagel Sliders are the ultimate savory breakfast or brunch idea. Soft mini bagels are layered with fluffy eggs, melty cheese, and crispy bacon, then baked until golden and irresistible, perfect for feeding a hungry family or a crowd.
Prepare the eggs. In a large bowl, combine the eggs, whole milk, black pepper, and salt. Whisk them well until all eggs are beaten. Next, fold in the cheddar cheese until well incorporated.
Cook the eggs. In a large non-stick skillet, add the eggs over medium-high heat. Scramble the eggs by using a spatula to continuously scrape the bottom of the pan, folding the uncooked egg over as you go. Do this until all of the egg is cooked. Remove it from the heat and set aside.
Preheat. Preheat your oven to 350 degrees Fahrenheit and spray a 9x13 casserole dish with non-stick cooking spray.
Make your sliders. In a 9x13 casserole dish, add the bottoms of your bagels. On each bottom bagel, evenly distribute the egg, then the Colby Jack cheese, bacon, chives, and then the tops of each bagel.
Butter your bagels. With a pastry or basting brush, brush the top of each bagel with the melted butter and sprinkle evenly with everything bagel seasoning.
Cook. Cook your bagels uncovered for 10-15 minutes or until the cheese has melted at the tops of your bagels are toasted. Remove them from the oven and allow them to cook slightly before removing them from the dish.
Serve and Enjoy!
Notes
Cook the bacon ahead of time. Crispy bacon adds flavor and structure, so cook it before layering your sliders. Paper towels help remove excess grease for the best texture. For ease, you can use microwaveable bacon!
Don’t overcook the eggs! Scrambled eggs will continue to cook slightly in the oven, so take them off the heat just as they finish setting.
Brush the bagels evenly. Melted butter and everything bagel seasoning creates that perfect golden, flavorful top. Make sure every bagel gets a good coating.
Let the sliders rest briefly. Give them 5 minutes after baking to settle, this helps the cheese set slightly and keeps everything together when serving.
