Instructions
Preheat the oven to 400° F.
Line a baking sheet with parchment paper.
Coat the parchment paper with avocado oil. Set aside.
To a bowl add the ground chicken, egg, Italian breadcrumbs, minced garlic cloves, lemon juice, fresh dill, Italian seasoning, garlic powder, onion powder, red pepper flakes, dried oregano, kosher salt, and black pepper.
Use a medium ice cream scoop or 2 to 2 1/2 tablespoons to make your meatballs.
Place the meatballs in the baking dish.
Coat the meatballs with the rest of the avocado oil.
Bake the meatballs for 10 minutes. While they are baking, make the tzatziki sauce.
Flip the meatballs over and bake for an additional 10 minutes or until golden brown and you have an internal temperature of 165° F.
Serve the meatballs with romaine lettuce, rice, feta cheese, cucumber, tomato, red onions, pita shells, kalamata olives, pita bread, and the tzatziki sauce.
Notes
The meatballs will be good for up to 5 days. The sauce will be good for up to 3 to 5 days—mix before serving.
