Greek Potato Salad

This Greek Potato Salad combines simple ingredients and once you let them marinate together. You get a great heap of deliciousness!

Ingredients

  • 3 pounds red potatoes
  • 1 tablespoon sea salt
  • 3 to 4 tablespoons red wine vinegar
  • ¼ cup fresh parsley finely chopped
  • ½ cup green onions thinly sliced
  • ¾ to 1 cup mayonnaise
  • 1 teaspoon garlic salt

Instructions

  • Cook unpeeled potatoes in boiling water with sea salt until tender, about 20 minutes. Cool until you can handle them. Peel potatoes. cut into chunks and place in a large bowl.
  • Sprinkle with vinegar. Add Mayonnaise, parsley, sliced green onions, garlic and more salt (If desired). Mix well.
