Greek Potato Salad
This Greek Potato Salad combines simple ingredients and once you let them marinate together. You get a great heap of deliciousness!
- 3 pounds red potatoes
- 1 tablespoon sea salt
- 3 to 4 tablespoons red wine vinegar
- ¼ cup fresh parsley finely chopped
- ½ cup green onions thinly sliced
- ¾ to 1 cup mayonnaise
- 1 teaspoon garlic salt
Cook unpeeled potatoes in boiling water with sea salt until tender, about 20 minutes. Cool until you can handle them. Peel potatoes. cut into chunks and place in a large bowl.
Sprinkle with vinegar. Add Mayonnaise, parsley, sliced green onions, garlic and more salt (If desired). Mix well.
