Total Time 45 minutes

Ingredients

  • ½ cup salted butter
  • 1 cup mini chocolate chips
  • 1 cup white granulated sugar
  • 3 large eggs
  • 1 ½ cups flour
  • ½ cup cocoa powder
  • 1 cup finely crushed graham crackers
  • ½ cup coarsely crushed graham crackers
  • 1 teaspoon baking powder
  • 1 cup mini marshmallows

Instructions

  • Preheat the oven to 375°F. Spray a 9 x 13 inch baking dish with nonstick cooking spray and add the brownie batter.
If you would like to remove brownies to cut, place parchment paper so that it is long enough to hang over the sides of the baking pan.
  • In a medium-sized mixing bowl, melt the butter and chocolate chips in the microwave. Start with 20 seconds, and continue until all of the chocolate is melted, stirring after each 20-second interval.
  • Whisk in the granulated sugar and eggs until the mixture is combined.
  • Add the flour, cocoa powder, finely crushed graham crackers, and baking powder. Whisk the dry ingredients into the chocolate mixture gently until they are fully incorporated.
  • Pour the brownie batter into the prepared baking dish. Sprinkle the marshmallows and the remaining crushed graham crackers on top of the brownie batter.
  • Bake the brownies for 30 minutes, or until a toothpick come out mostly clean (a few crumbs) from the center of the baking dish.
  • Slice into squares, serve, and enjoy!

Notes

  • Don't overbake: To achieve a fudgy texture, be careful not to overbake the brownies. Start checking for doneness a few minutes before the recommended baking time, and remove them from the oven as soon as a toothpick inserted into the center comes out with a few moist crumbs.
  • Toasted Marshmallows– If you want the marshmallows extra toasted, before removing the brownies from the oven, switch on the broiler to get a golden brown top. Or, if you have a kitchen torch, quickly treat the tops of the mini marshmallows for s’more’s quality fire-roasted marshmallows! Just be sure to keep an eye on them as they can quickly go from toasted to burnt.
  • Enhance the Sweet Flavor– If desired, sprinkle the tops of the brownies with a small pinch of salt in an even layer. The salty taste will be subtle enough to enhance the sugary-sweet notes of the recipe.
  • Let the brownies cool completely: It's important to let the brownies cool completely in the baking dish before slicing them. This allows them to set and makes it easier to cut them into neat squares without crumbling.
