Ingredient Notes

A labeled image of ingredients needed to make s'mores brownies.
  • Butter: Salted butter adds moisture and rich flavor to the brownies.
  • Chocolate chips: Mini chocolate chips bring the chocolate bar taste to the s’mores brownies. Use milk, semi-sweet, or dark chocolate– Whichever you prefer!
  • Sugar: Granulated sugar is commonly used in brownie recipes. It adds sweetness and helps to achieve a moist texture.
  • Eggs: You will need eggs to bind the ingredients together. They also contribute to the texture and structure of the brownies.
  • Flour: All-purpose flour is typically used in brownie recipes. It gives the brownies structure and helps them hold their shape.
  • Cocoa powder: Bring all the rich chocolaty flavor with cocoa powder.
  • Graham crackers: You’ll need coarsely crushed and finely crushed graham crackers for these s’mores brownies. You will want to use a box of whole graham crackers so that you can get some of them coarsely chopped.
  • Baking powder: Baking powder helps the brownies rise slightly and gives them a softer texture. Make sure it is fresh and not expired.
  • Marshmallows: Marshmallows will be added as a topping to mimic the marshmallow component of traditional s’mores. You can use mini marshmallows or cut regular-sized marshmallows into smaller pieces.

How To Make the Best S’mores Brownies

Be sure to see the recipe card below for exact ingredients and full recipe instructions!

Step 1 | Preheat and prep the dish

Begin by preheating the oven to 375°F and spraying a 9 x 13-inch baking dish with nonstick cooking spray to prevent the brownies from sticking to the bottom of the pan.

Step 2 | Add parchment paper, if desired

If you want to remove brownies from the dish to easier cut them into squares, place parchment paper so that it is long enough to hang over the sides of the baking pan.

Step 3 | Melt the butter and chocolate

In a medium bowl, melt the chocolate chips and butter in the microwave. Start with 20 seconds, and continue until all the chocolate is melted, stirring after each 20-second interval.

Step 4 | Add sugar and eggs

Next, in a separate bowl or in the bowl of a stand mixer, whisk in the white sugar and eggs until the mixture is thoroughly combined.

Step 5 | Mix with the dry ingredients

Now, add the flour, cocoa powder, finely crushed graham crackers, and baking powder. Gently whisk the dry ingredients into the chocolate mixture until they are completely incorporated.

Step 6 | Pour brownie ingredients into pan, add the topping, and bake

Next, pour the brownie batter into the prepared pan. Sprinkle the marshmallows and the remaining crushed graham crackers on top of the brownie batter.

Then, bake the brownies for 30 minutes or until a toothpick can be cleanly removed from the center of the baking dish.

Step 7 | Slice and serve!

Finally, slice the fudgy s’mores brownies into squares after they’ve cooled. Then, serve and enjoy!

Tips

  • Don’t overbake: To achieve a fudgy texture, be careful not to overbake the brownies. Start checking for doneness a few minutes before the recommended baking time, and remove them from the oven as soon as a toothpick inserted into the center comes out with a few moist crumb
  • Toasted Marshmallows– If you want the marshmallows extra toasted, before removing the brownies from the oven, switch on the broiler to get a golden brown top. Or, if you have a kitchen torch, quickly treat the tops of the mini marshmallows for s’more’s quality fire-roasted marshmallows! Just be sure to keep an eye on them as they can quickly go from toasted to burnt.
  • Enhance the Sweet Flavor– If desired, sprinkle the tops of the brownies with a small pinch of salt in an even layer. The salty taste will be subtle enough to enhance the sugary-sweet notes of the recipe.
  • Let the brownies cool completely: It’s important to let the brownies cool completely in the baking dish before slicing them. This allows them to set and makes it easier to cut them into neat squares without crumbling.

Variations and Substitutions

  • Experiment with additional toppings: While the classic s’mores brownies include marshmallows and graham crackers, feel free to get creative with additional toppings. You can sprinkle some chocolate chips, a square or two of a Hershey’s chocolate bar, crushed nuts, or drizzle melted chocolate or caramel sauce on top to enhance the flavor.
  • Marshmallow Layer: Make a thick marshmallow layer by smearing a spoonful of marshmallow fluff on top for more sugary-sweet s’mores flavor!
  • Graham Cracker Crust: Add a buttery graham cracker crust to the recipe– YUM!
  • Cookie Dough S’mores Brownies: Press a layer of cookie dough onto the brownie batter before baking for a delicious cookie dough-filled twist.
  • Peanut Butter S’mores Brownies: Swirl in some peanut butter into the brownie batter for a peanut butter and chocolate combination. You can also add a layer of peanut butter between the graham cracker crust and the brownie batter.
  • Mint Chocolate S’mores Brownies: Add a teaspoon of mint extract to the brownie batter for a refreshing twist on the classic S’mores flavor. You could replace the graham crackers with Mint Oreo Cookies too.
  • Gluten-Free S’mores Brownies: Use a gluten-free flour blend instead of all-purpose flour to make the brownies gluten-free

Recipe FAQ’s

How do you make crispy brownies?

If you prefer your brownies to have that satisfying crinkled surface and crisp edges, whisk the eggs separately to ensure the brownie batter becomes extra fluffy and light while baking, creating a crispy outside texture.

What makes a brownie fudgy vs. cakey?

The recipe with more butter than flour will likely produce more fudgy and chewy brownies than one with more flour. So, for extra fluffy and cakey brownies, add a bit more flour to the recipe. And on the other hand, include more butter to create fudgy brownies.

Can you use oil instead of butter for homemade brownies?

Melted butter is best for homemade brownies when you want them to be nice and fluffy with rich flavor. The butter helps the recipe rise while adding depth to the flavor. In contrast, the oil, like vegetable oil, will not aid in leavening and therefore creates more dense brownies without the hint of buttery taste. Either will work to make brownies from scratch, but butter yields the best results. However, when it comes to boxed brownie mix, you should follow the instructions on the box.

Can you make S’mores Brownies with a brownie mix?

While these are just as easy to make as using a brownie mix. You can use your favorite boxed mix to make this recipe quicker and practically effortless. Remove the baking soda, flour, sugar, and cocoa powder and follow the directions on the brownie box, adding the ingredients that make them s’mores brownies.

Can You Make S’mores Brownies Ahead of Time?

Sure! These decadent s’mores brownies will last a couple of days appropriately stored on the countertop, allowing you to make them a day or two before serving. Store in the refrigerator if you plan on serving them later in the week.

Storage Instructions

Keep on the Counter: Brownies are best stored in an airtight container at room temperature. They keep for up to three days but retain their moist texture.

Refrigerate: Refrigerating brownies may remove some moisture, leaving you with slightly dryer treats than when they were freshly made. Nevertheless, they can be stored in the fridge in an airtight container for up to a week.

Freeze for Long-term Storage: Freeze the s’more brownies for extended storage. Place the squares in a freezer-safe bag or container and keep them in the freezer for about three months. Then, let them thaw in the refrigerator overnight to serve the following day.
