I still remember the excitement of trying s’mores for the first time as a kid. The combination of melted marshmallows, gooey chocolate, and crispy graham crackers was a taste sensation like no other.

That’s why I was inspired to create a s’mores cake that could be shared with loved ones at family gatherings. After all, we can’t always be gathered around a campfire.

The recipe is a nod to the classic s’mores flavors but in the form of a cake that’s easy to make and perfect for sharing. It brings back all the fond memories of sitting around the campfire, but now we can enjoy those flavors all year round, no matter where we are.

Ingredient Notes

  • Chocolate cake mix: You can use any brand of chocolate cake mix that you prefer. Some popular brands include Betty Crocker, Duncan Hines, and Pillsbury.
  • Eggs: Make sure the eggs are fresh and at room temperature. If the eggs are too cold, they can cause the batter to become lumpy.
  • Vegetable oil: You can use any type of oil that may affect the flavor of the cake. Vegetable oil and canola oil are both great choices.
  • Water: Use room temperature water for best results.
  • Graham crackers: You can use store-bought graham crackers or make your own by crushing graham crackers in a plastic bag with a rolling pin. Alternatively, you can use graham cracker crumbs.
  • Mini marshmallows: These are small marshmallows, not the jumbo ones that are commonly used for making s’mores. These are the perfect bite size.
  • Whipped vanilla frosting: You can use any brand of whipped vanilla frosting that you prefer or make your own frosting from scratch.
  • Marshmallow fluff: This is a sweet, sticky spread that tastes just like marshmallows. This marshmallow cream can be found in jars in the baking aisle of most grocery stores

Variations and Substitutions

  • Cake Mix: You can use different flavors of cake mix, such as vanilla or chocolate fudge, a marble cake, instead of the chocolate cake mix. This cake is also delicious with a vanilla cake and 1 ½ cups of chocolate chips.
  • Toppings: Instead of whipped vanilla frosting, you can use chocolate buttercream frosting, chocolate frosting, milk chocolate ganache, or cream cheese frosting. You can also sprinkle chopped nuts or drizzle caramel sauce over the frosting. Load it up with graham cracker pieces or bite-sized chocolate bars for an extra wow factor.
  • Filling: You can use different fillings for the cake layers, such as chocolate ganache, peanut butter, or Nutella. You can also add a layer of sliced bananas, strawberries, or raspberries for a fruity twist.
  • Graham Crackers: Instead of crushed graham crackers, you can use graham cracker crumbs, graham cracker pie crust, or chocolate graham crackers. You can also substitute graham crackers with other types of cookies, such as Oreos or Nilla Wafers. Try Ritz crackers for a salty combination.
  • Toasted Marshmallows: Take the marshmallows a little further by toasting them under the broiler or with a kitchen torch and topping the cake with toasted marshmallows.

How To Make an Easy S’mores Cake Recipe

Step 1 | Prepare S’mores Cake Batter

To start, preheat your oven to 350°F. While that’s heating up, let’s get started on the cake batter.

In a large bowl, whisk together the cake mix, eggs, vegetable oil, and water until it’s nice and smooth.

This can be done by hand with a whisk or by using a hand mixer. You can also mix in the bowl of a stand mixer with a paddle attachment or by using a hand mixer. Start on low speed and then increase to medium speed until just combined.  

Next, fold in crushed graham crackers and mini marshmallows.

Step 2 | Bake Cake

Grease a 9×13 inch baking dish with butter or nonstick cooking spray, and pour in the cake batter. If you would like to remove the cake completely to serve, line the pan with parchment paper so that it hangs out of all sides of the pan.

Pop it in the oven and bake.

Step 3 | Prepare Marshmallow Fluff Frosting, Cool Cake & Ice Cake

While the cake is baking, let’s make the frosting. 

In a separate bowl, use an electric hand mixer at medium speed to whisk together the whipped vanilla frosting and marshmallow fluff until it’s creamy and smooth. It tastes just like homemade marshmallow fluff buttercream with little effort.

Once the cake has cooled down for 30 minutes, use an offset spatula to frost the top of the cake with the frosting mixture. Be sure to cover the entire cake.

Finally, sprinkle the remaining crushed graham cracker crumble (you can use fine crumbs or larger pieces or a mixture of both) and mini marshmallows on top of the frosting.

Tips

  • Don’t overmix the batter: Overmixing the batter can cause the cake to become tough and dense. Mix until all the ingredients are just combined.
  • Crush the graham crackers into small pieces: Crush the graham crackers into small pieces using a food processor or by placing them in a plastic bag and crushing them with a rolling pin. This will help them distribute more evenly throughout the cake batter. I like to have a mixture of tiny pieces and some larger pieces to bite into.
  • Let the cake cool before frosting: Make sure the cake is completely cooled before frosting it, as warm cake can cause the frosting to melt and slide off.

Storage & Make Ahead Instructions

Make Ahead: You can make this s’mores cake recipe in advance and store it in the refrigerator for up to 2 days for best results or freeze it for up to 2-3 months. However, if you plan to frost the cake, it’s best to do it just before serving to ensure the frosting is fresh and the cake looks its best.

Storage: You can store leftover cake in an airtight container or covered with foil or plastic wrap at room temperature for up to 3-4 days or in the refrigerator for up to 5 days.

What to Serve with Easy S’mores Cake

S’mores cake is a rich and decadent dessert that pairs well with just about anything. It’s wonderful for spring or the perfect summer dessert to serve at a BBQ or any gathering or celebration. Memorial Day and July 4th are just around the corner.

This easy s'mores cake recipe is a perfect dessert for those who love the classic campfire treat. The chocolate cake mix is infused with graham crackers, and topped with a fluffy marshmallow frosting, creating a deliciously decadent dessert that is sure to impress your friends and family.

Ingredients 

  • 1 box chocolate cake mix
  • 3 large eggs, room temperature
  • ½ cup vegetable oil
  • 1 ¼ cup water
  • 1 cup graham crackers, crushed
  • 1 cup mini marshmallows
  • 12 ounce whipped vanilla frosting
  • 1 cup marshmallow fluff

Instructions

  • Preheat the oven to 350°F.
  • While the oven preheats, prepare the cake batter by whisking together the cake mix, eggs, vegetable oil, and water. Fold in the ¾ cup of crushed graham crackers and ¾ cup of mini marshmallows.
  • Coat a 9 x 13 inch baking dish with butter or nonstick cooking spray. Pour the cake batter into the pan and bake for 25 to 30 minutes (until a wooden pick inserted into the center comes out mostly clean).
  • Allow the cake to cool for 30 minutes while you whisk together the frosting and marshmallow fluff with an electric hand mixer.
  • Once the cake has had time to cool, use a spatula to frost the cake. Top your cake with the remaining graham crackers and marshmallows.
  • Serve and enjoy!
