Juicy chicken with broccoli and a cheesy sauce topped with buttery Ritz crackers. This family favorite is an easy to make casserole much like the one at Cracker Barrel.
2poundsboneless skinless chicken breast cutlets (or tenderloins)
½ to 1 teaspoonsalt(or to taste)
½teaspoonpepper
1cupwhole milk
10.5ouncecheddar cheese soup(I use Campbell's)
½teaspoonpaprika
½teaspoongarlic powder
¼teaspoononion powder
2cupsshredded sharp cheddar cheesedivided
10ouncesfrozen broccoli florets(frozen and thawed)
2sleevesRitz crackerscrushed, divided
3teaspoonsbuttermelted

Preheat oven to 350℉. Lightly spray the bottom of a 9 X 13 casserole dish with cooking spray.
Place the chicken at the bottom of a large casserole dish and season it with salt and pepper.
Add the broccoli and evenly distribute it around the chicken, nestling it in.
In a large bowl, whisk together the milk, cheddar soup, 1 cup of shredded cheese, ½ cup of crushed crackers, paprika, garlic powder, and onion powder.
Pour the mixture over the chicken and broccoli.
Next, add the remaining shredded cheese over the top, and then sprinkle the crushed crackers over the cheese.
Drizzle the melted butter evenly over the crackers.
Bake for 45 minutes, or until the chicken is fully cooked and reaches an internal temperature of 165℉.
Notes
If you would like to use full breasts make sure to cut in half or smaller pieces. If using larger breast increase cook time by 10 minutes or until chicken is cooked and 165 degrees in the center.
