- 1 ⅔ cups flour spooned into measuring cup
- ¾ cup sugar
- ½ light brown sugar
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- ¾ teaspoon salt
- 1 teaspoon cinnamon
- 1 teaspoon pumpkin pie spice
- 2 large eggs room temperature
- 1 cup canned pumpkin
- ½ cup vegetable or canola oil
- ½ cup milk
Preheat oven to 350 degrees.
In a bowl combine dry ingredients: flour, sugar, brown sugar, baking soda, baking powder, salt, cinnamon, and pumpkin pie spice.
In another bowl combine large eggs, pumpkin, vegetable oil, milk and whisk until combined and smooth.
Spray loaf pan with baking spray or butter and flour pan.
Pour batter into loaf pan and bake for 50 to 65 minutes, depending on your oven. Check center with a toothpick at 50 minutes. Should come out clean.
