Ingredients

  • 1 ⅔ cups flour spooned into measuring cup
  • ¾ cup sugar
  • ½ light brown sugar
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • ¾ teaspoon salt
  • 1 teaspoon cinnamon
  • 1 teaspoon pumpkin pie spice
  • 2 large eggs room temperature
  • 1 cup canned pumpkin
  • ½ cup vegetable or canola oil
  • ½ cup milk

Instructions

  • Preheat oven to 350 degrees.
  • In a bowl combine dry ingredients: flour, sugar, brown sugar, baking soda, baking powder, salt, cinnamon, and pumpkin pie spice.
  • In another bowl combine large eggs, pumpkin, vegetable oil, milk and whisk until combined and smooth.
  • Spray loaf pan with baking spray or butter and flour pan.
  • Pour batter into loaf pan and bake for 50 to 65 minutes, depending on your oven. Check center with a toothpick at 50 minutes. Should come out clean.
