- 2 cucumbers peeled and diced
- 1 pkg grape tomatoes sliced in half
- ¾ cup jicama sliced
- 6 ounces feta cheese crumbled
- 1 can medium black olives
Dressing
- ⅓ to ½ cup white wine vinegar
- ¼ cup olive oil
- ½ teaspoon oregano
Salad
Mix diced cucumber, sliced grape tomatoes, jicama, olives and half of feta cheese together. Toss with dressing. Top with remaining feta. Serve
