Cucumber Tomato Feta and Olive Salad

Ingredients

  • 2 cucumbers peeled and diced
  • 1 pkg grape tomatoes sliced in half
  • ¾ cup jicama sliced
  • 6 ounces feta cheese crumbled
  • 1 can medium black olives

Dressing

  • ⅓ to ½ cup white wine vinegar
  • ¼ cup olive oil
  • ½ teaspoon oregano

Instructions

Dressing

  • Mix vinegar, olive oil and oregano together. (I shake it up in a plastic container) or you can use a whisk.

Salad

  • Mix diced cucumber, sliced grape tomatoes, jicama, olives and half of feta cheese together. Toss with dressing. Top with remaining feta. Serve
