My son only likes a BL Sandwich – How boring and what an insult to these beautiful tomatoes! Tomato Season is starting so bring on the juicy fruit that I love!  As for sauce, son approved, and whole household is over the moon about it. We really could put it on top of just about anything and call it a day.  It is sweet and spicy and well it’s mayo, so what more is there really to say. Mayo just makes the world go round.go round.. go round.  Okay I am singing again, you know me! At least this isn’t live video.  Be very glad!!!

As for this “SAMICH”, I like to use a bakery style bread that I can slice a little thicker or even sour dough oh yum! Truth be known, I like it in the toaster oven the old-fashioned way, but on occasion I shake it up and grill it in a pan with some butta!!

It’s time to get cookin’

Prepare your bacon however you like! 400° oven on a rack (I use a broiler pan) for 15 to 20 minutes works like a charm.

Today I stuck with traditional toasted bread. So, grab that delicious bread and pop it in the toaster.

And pile on your thick cut swoon worthy (applewood smoked my fav) bacon, and add your favorite lettuce!  Butter Lettuce is what’s on tap for today, such sweetness and tender and oh so perfect.

Another star in this line up, delicious ripe and juicy tomatoes!  I know this spring and summer I will be finding so many ways to use these because oooooooh are they amazing this time of year.  Insert salt and pepper to taste on top of the “T”

Now for the last piece of bread onto it goes more of that mayo. Top this beast!! You are ready to dig in!!!

Ingredients
 

  • Homestyle or Sour Dough Bread
  • sliced Bacon - cooked
  • Lettuce
  • Tomato
Honey Sriracha Mayo
  • ½ cup Mayo
  • 1 teaspoon honey
  • 1 tablespoon Sriracha

Instructions
  

  1. Mix together mayo, Sriracha and honey until combined.
  2. Toast or grill bread
  3. Spread mayo on inside of bread, stack bacon, lettuce and tomato on one side. Salt and Pepper tomato to taste. Spread mayo on other slice of bread and top.

    This looks like a great Recipe to try , I only have 1 question . I was reading the Ingredients and noticed that there is something missing by the 1 Teaspoon ? Is it maybe the Honey ? I didn’t see it as one of the Ingredients on the Recipe . Thanks
