This week’s meal plan is perfect for summer evenings and includes a little extra festive fun for July 4th! Whether you’re grilling up BBQ wings or enjoying a creamy no-bake cheesecake bar, these meals will make your week easy, delicious, and full of flavor.

This Week’s Tips for Success

Meal Prep Tips:

  • Slow Cooker Roast Beef Debris: This meal is perfect for wraps, over rice, or in a Po-Boy. Then use leftovers served over loaded mashed potato casserole later in the week.
  • Strawberry Salad: Wash and prep your greens and strawberries ahead of time to save time on Wednesday. Or grab it already prepped at the store. Just toss with the lemon vinaigrette when ready to serve.
  • Mashed Potato Casserole: Make this casserole ahead of time and bake it later in the week for an easy, comforting side. Pair this with leftover roast beef or rotisserie chicken. Turn it into a main dish casserole by layering shredded rotisserie chicken, leftover roast, or seasoned ground beef on the bottom of the dish before adding the potatoes on top.
  • BBQ Wings: Make the sauce the night before so it’s ready for grilling on Friday.
  • Fireworks Oreo Cheesecake Bars: Assemble these bars a day ahead and let them chill in the fridge overnight.

Recipe Customizations:

  • Chicken and Bacon Pasta: Try swapping spinach for kale or adding roasted veggies like zucchini or bell peppers.
  • Roast Beef Debris: Make it even heartier by adding caramelized onions or serving it with a side of crusty bread for dipping.
  • Strawberry Salad: If you prefer a different fruit, swap strawberries for blueberries, blackberries, or peaches. All are equally delicious with the lemon vinaigrette.
  • BBQ Wings: Not a fan of spice? This recipe has a subtle sweetness with a hint of heat. Reduce the amount of peppers for a milder version of these wings, or increase the amount for extra spice.
  • Fireworks Oreo Cheesecake Bars: Try swapping the Oreos for any other cookie you love (chocolate chip or graham crackers would be great alternatives!).
