Nikki’s Top Tips Before You Make Breakfast Bagel Sliders

  • Cook the bacon ahead of time. Crispy bacon adds flavor and structure, so cook it before layering your sliders. Paper towels help remove excess grease for the best texture. For ease, you can use microwaveable bacon!
  • Don’t overcook the eggs! Scrambled eggs will continue to cook slightly in the oven, so take them off the heat just as they finish setting.
  • Brush the bagels evenly. Melted butter and everything bagel seasoning creates that perfect golden, flavorful top. Make sure every bagel gets a good coating.
  • Let the sliders rest briefly. Give them 5 minutes after baking to settle, this helps the cheese set slightly and keeps everything together when serving.

Step 1 | Prep the Eggs

In a large bowl, combine the eggs, whole milk, black pepper, and salt. Whisk them well until all eggs are beaten.

Next, fold in the cheddar cheese until well incorporated.

In a large non-stick skillet, add the eggs over medium-high heat. Scramble the eggs by using a spatula to continuously scrape the bottom of the pan, folding the uncooked egg over as you go. Do this until all of the egg is cooked. Remove it from the heat and set aside.

Step 2 | Assemble

Preheat your oven to 350 degrees Fahrenheit and spray a 9×13 casserole dish with non-stick cooking spray.

In a 9×13 casserole dish, add the bottoms of your bagels. On each bottom bagel, evenly distribute the egg, then the Colby Jack cheese, bacon, chives, and then the tops of each bagel.

Step 3 | Brush, Top & Bake

With a pastry or basting brush, brush the top of each bagel with the melted butter and sprinkle evenly with everything bagel seasoning.

Cook your bagels uncovered for 10-15 minutes or until the cheese has melted at the tops of your bagels are toasted. Remove them from the oven and allow them to cook slightly before removing them from the dish.

Variations and Substitutions

  • Protein: If you prefer, you can swap bacon for sausage, ham, or turkey bacon! For a vegetarian version, you can use vegan bacon or skip the protein.
  • Cheese: Try different cheeses like Swiss, pepper jack, or mozzarella. Any melty cheese will do!
  • Bagels: Use whole wheat or gluten-free mini bagels if needed!
  • Other Breads: These could be made on pretzel sliders or even Hawaiian rolls.

Recipe FAQs

Can I use regular-sized bagels instead of mini bagels?

Yes, you can use regular-sized bagels instead of mini bagels. Just keep in mind you’ll need more egg and filling to fully cover them, and you may need to adjust the baking time slightly since the sliders will be thicker.

Should I cook the slider filling ingredients before baking?

Yes, ingredients like eggs and bacon should be cooked before assembling the sliders. Pre-cooking ensures everything is fully cooked and evenly heated, preventing excess moisture from making the bagels soggy.

Storage & Make-ahead Tips

Storage: Store leftover sliders in an airtight container in the fridge for 2 to 3 days. Reheat in the oven or microwave for a quick breakfast.

Freeze: For longer storage, freeze the fully assembled but unbaked sliders in a freezer-safe dish for up to 2 months. Thaw overnight in the fridge and bake as directed.

Make Ahead: You can also assemble the sliders ahead of time, cover, and refrigerate until ready to bake.

What to Serve with Bagel Sliders

These breakfast bagel sliders are great on their own, but you can serve them with a full brunch spread! If I’m feeding a crowd, I like to serve them with croissant waffles and a mixed berry yogurt parfait! Of course, a side of fresh-squeezed orange juice, coffee, or even a mimosa would all go great with these sliders, too.
