Mid-February is the perfect time to bring a little extra flavor to the dinner table, and with Mardi Gras in full swing, this week’s meal plan leans into bold, comforting meals that still work on busy weeknights. These are the kinds of dinners that feel special without requiring extra time or effort — a mix of familiar favorites and a few Louisiana-inspired dishes that add a fun twist to the week.

This Week’s Tips for Success

Monday: Blackened Chicken with Cajun Lemon Butter Sauce
Meal Prep Tip: Pick up your favorite Cajun seasoning for this recipe.
Serving Idea: Serve with pasta, grit cakes, instant pot mashed potatoes, or roasted vegetables.

Tuesday: Red Beans and Rice
Meal Prep Tip: This is even better the next day — perfect for leftovers. I have three cooking methods for this recipe. Instant Pot, Slow Cooker, and a quick stovetop. They are all delicious.
Customization: Adjust the spice level with mild or hot sausage.

Wednesday: Beef Stroganoff
Meal Prep Tip: Slice beef earlier in the day so dinner comes together fast. You can use shaved steak or ground beef for a shortcut!
Serving Idea: Serve over egg noodles, rice, or mashed potatoes.

Thursday: Garlic Parmesan Chicken (Slow Cooker)
Meal Prep Tip: Add chicken to the slow cooker in the morning and let it do the work. You can cook and meal-prep the pasta ahead.
Customization: Stir in pasta or serve over rice, depending on preference.

Friday: Pepperoni Pinwheels
Meal Prep Tip: Assemble ahead and refrigerate until ready to bake.
Serving Idea: Serve with marinara sauce for dipping.

Weekend Treat: Easy King Cake
Tip: These use an easy shortcake, so this one is so quick and easy.
Fun Idea: Add festive sanding sugar for a Mardi Gras-inspired finish.

Each meal plan includes five dinner recipes the whole family will love, with a nice variety to keep things interesting. Add a side dish or salad, and you have a complete meal!
