This week’s meal plan is all about bringing together comforting slow-cooked meals and fresh seasonal flavor. From tender meatballs and salsa verde chicken to a crisp kale salad and sweet strawberry-rhubarb dessert, every recipe is designed to help you slow down and savor summer, without the stress.
Meal Prep Tips:
- Start the week slow: Let your crockpot do the work with meatballs on Monday. They also freeze beautifully for later.
- The salsa verde chicken can be used for tacos, salads, wraps, or even tortilla soup.
- Massage your kale on prep day to soften the leaves and make the salad extra tender and flavorful.
- Use stew meat, a cut-up chuck roast, or sirloin tips for the beef tips, and cut your prep time by trimming and storing them early.
- Make the crumble filling ahead and store it in the fridge—just top and bake when you’re ready for dessert!
Recipe Customizations:
