This week’s meal plan lineup is all about fresh flavors, easy prep, and a little fun! Whether you’re firing up the oven or tossing together a quick salad, these recipes bring big taste without complicating your day. Perfect for a low-stress summer week!

Meal Prep Tips:

  • Marinate the Cuban pork the night before for maximum flavor and less prep on Monday. This is completely optional, but I love to let it marinate overnight.
  • That mojo pork makes fantastic leftovers—use it in tacos, burritos, or bowls with cilantro, Spanish yellow rice, or store-bought Yellow or Mexican rice for a simple meal.
  • Prep a big batch of homemade taco seasoning at the start of the week. It’s a go-to for quick taco night using ground beef, chicken, or even roasted veggies. Easy for Taco Tuesday Night!
  • Save time midweek by using rotisserie chicken in your BBQ Chicken Salad—same flavor, way less effort. Although the chicken comes together quickly, you can also prep the chicken ahead of time on the weekend if you’d like..
  • Make your trifle in advance and chill until ready to serve. It’s the perfect no-bake dessert for a summer evening.

Recipe Customizations:

  • Turn the potato skins into a full meal by topping them with leftover chopped pork or BBQ, which you can also grab in the refrigerated meat section at your grocery store.

  • Lemon Blueberry Trifle: Not a blueberry fan? Try strawberries, raspberries, or even peaches for a fresh twist.
