I’ll admit it, I might be a little obsessed with Biscoff. There’s something about that warm, caramelized cookie flavor that makes everything taste extra cozy. If you’ve been around here a while, you know the list is long: Biscoff muddy buddies, Biscoff blondies, Biscoff cheesecake, and even a Biscoff latte (yes, I went there). These truffles are the latest addition to my growing collection, and they might just be my favorite yet!

Each bite is soft and creamy inside, with a melt-in-your-mouth white chocolate coating and a little crunch from the cookie crumb topping. They’re perfect for gifting, holidays, or just keeping in the fridge for when your sweet tooth hits. Plus, they look way fancier than they actually are, no one has to know they only take a few minutes to make!

Flavor: Sweet, spiced, and buttery, these truffles have layers of Biscoff flavor that make them so good! The creamy cookie butter filling and smooth white chocolate coating make the perfect sweet bite.

Nikki’s Top Tips Before You Start…

  • Chill before dipping. Freezing the truffle balls for 20 to 30 minutes helps them firm up, so they hold their shape when coated. Don’t skip this step! It makes dipping so much easier.
  • Use good-quality white chocolate. The smoother your chocolate melts, the prettier your truffles will look. If your coating seems too thick, stir in a tiny bit of coconut oil to thin it out.
  • Work in small batches. Take a few truffles out of the freezer at a time to dip. Keeping the rest cold ensures the coating sets nicely and doesn’t get messy.

  • Lotus Biscoff Cookies: Crush them finely for a smooth filling. You can use any brand of speculoos cookies if Biscoff aren’t available.
  • Biscoff Cookie Butter: Adds creamy texture and signature cozy flavor. The smooth version works best here! You’ll need it for both the truffle filling and the white chocolate coating!
  • Cream Cheese: This balances out the sweetness and helps the truffles firm up. Make sure it’s softened so it mixes easily!
  • White Chocolate: Creates a sweet, creamy shell. You can use chips, chopped bars, or even white candy melts.
  • Crushed Cookies (for topping): Adds a pretty, crunchy finish! Plus, more Biscoff is always a good idea.

Step 1 | Make the Filling

In a medium bowl, mix the cookie crumbs, cookie butter, and cream cheese until smooth and well combined.

Step 2 | Roll into Balls & Chill

Scoop 1 Tbsp portions and roll into balls. Place on a parchment-lined baking sheet. Freeze for 20–30 minutes, until firm.

In a microwave-safe bowl, combine white chocolate and cookie butter. o Microwave in 20-second bursts, stirring after each, until melted and smooth. Should take less than 2 minutes.

Step 4 | Dip & Garnish

Using a fork, dip each chilled truffle into the coating, letting excess drip off. Place  back on parchment. 

Use leftover coating to drizzle across truffles (optional). Immediately sprinkle with cookie crumbs while the coating is still wet. Chill for 30 minutes to set.

Variations and Substitutions

  • Chocolate Coating: Swap white chocolate for dark or milk chocolate for a less sweet, more balanced bite.
  • Add a Center: Press a mini Biscoff cookie or chocolate chip into the center before rolling for a surprise crunch in the middle!
  • Decorate Differently: Drizzle with melted dark chocolate, top with sea salt flakes, or roll in crushed cookies for a different look.

Biscoff Truffle FAQs

Do I need a food processor?

It’s helpful but not required. You can crush the cookies in a zip-top bag with a rolling pin. Just make sure there aren’t any large chunks!

Why is my coating too thick?

If your white chocolate starts to seize or gets too thick, stir in 1 teaspoon of coconut oil or vegetable shortening to smooth it out.

What to Serve with Biscoff Truffles

These no-bake Biscoff truffles are perfect on their own, but they also pair beautifully with a cup of coffee, hot tea, or maybe some hot chocolate. For parties, I like to serve them on a dessert tray alongside pumpkin brownies, white chocolate macadamia nut cookies, and some cannoli dip!

Storage: Store in an airtight container in the fridge for up to 1 week.

Freeze: You can freeze the rolled (uncoated) truffles for up to 2 months. Let them thaw slightly before dipping in chocolate.

  • 1 ½ cups Lotus Biscoff cookies, finely crushed (about 28 cookies)
  • ¾ cup Biscoff cookie butter spread
  • 4 oz cream cheese, softened

Coating

  • 12 oz white chocolate, chopped or chips
  • ½ cup Biscoff cookie butter spread
