  • Caramel Dip: You can use store-bought caramel sauce, like Marzetti Dip, or make your own creamy caramel from scratch if you prefer a homemade touch. If using store-bought caramels, melt them in a microwave or on the stovetop until they are smooth and can be easily spread over the shortbread cookies.
  • Chocolate: For the chocolate layer, use high-quality chocolate chips or a chocolate bar. You can choose between milk chocolate, semi-sweet, or dark chocolate, depending on your preference. I used a combination for this batch.

First, take your shortbread cookies and place about one teaspoon of caramel dip onto each one. Use a spoon to spread the caramel evenly over the top of the shortbread base, making sure it’s nicely coated.

Next, it’s time to melt your chocolate.

Grab a microwave-safe bowl and heat the chocolate in 15-second increments. Stir after each increment until the chocolate is completely melted and smooth.

Once your chocolate is ready, spoon about one teaspoon of the melted chocolate chips onto the caramel-covered cookies. Again, use your spoon or an offset spatula to make sure the chocolate is spread evenly over the caramel layer.

If you’re a fan of that sweet-salty combo, you can sprinkle a little salt on top of your cookies at this point. This step is optional, but it can add a nice touch of flavor.

  • 2 cups of all-purpose flour.

Preheat your oven to 350°F and line a baking sheet with parchment paper. In a large bowl, cream butter and sugar until light and fluffy (about 2 minutes). Add in the flour and mix until the dough just comes together.

Turn dough onto powdered sugar dusted counter and roll gently in a log about 2 inches wide. Then, wrap cookie dough with plastic wrap and allow it to firm in the refrigerator for at least 1 hour, but you can make it ahead for up to 3 days.

Once the dough is firm, slice the cookies into ¼-inch thick rounds and place them on a baking tray for 18-20 minutes or until just golden. Cool slightly, then transfer to a cookie rack until completely cooled.

  • 10 ounces caramel dip
  • 1 cup milk chocolate chips, melted
  • ½ teaspoon coarse or flake kosher salt, (optional)

Instructions

  • Place 1 teaspoon of caramel dip onto each cookie. With a spoon evenly distribute the caramel on top of the cookie.
