BBQ Comfort, Fresh Summer Veggies, and A Sweet No-Bake Dessert
This week’s meal plan is all about easy, crowd-pleasing BBQ-inspired dinners and fresh summer flavors. From tender, slow-cooked chicken to cheesy pasta bakes and a cool, refreshing dessert, these recipes are perfect for busy evenings and laid-back weekends.
Meal Prep Tips:
- Slow Cooker BBQ Chicken: This recipe serves 8, so there is usually plenty left over, but if you have a big crowd, make 1.5 or double the recipe to use for Wednesday’s baked potatoes.
- Taco Spaghetti Bake: This is perfect for leftovers!
- Grilled Veggie Pasta Salad: Grill the veggies earlier in the week to save time on Thursday—just toss them with pasta when you’re ready to eat!
- Baked Potatoes: Bake the potatoes earlier in the day and simply reheat for a quick dinner option—great for busy nights.
- Key Lime Pie: Assemble the jars ahead of time and let them chill until ready to serve—no last-minute prep required!
Recipe Customizations:
- BBQ Pulled Chicken: Use this chicken for tacos, burritos, nachos, or bowls with cilantro rice. It’s also delicious over baked mac and cheese or my creamy Instant Pot Mac and Cheese.
- Taco Spaghetti Bake: Swap ground beef for turkey or a plant-based substitute.
- Loaded BBQ Baked Potatoes: Add any toppings you like! Try grilled veggies, shredded cheese, or even bacon bits.
- Grilled Veggie Pasta Salad: Add mozzarella balls, chickpeas, or grilled chicken for extra protein.
- Reuben Sliders: Use turkey for a lighter take on this classic sandwich. Try it with my Pastrami!
- Key Lime Pie Jars: Not a lime fan? Swap in lemon or berries for a different flavor.
Each meal plan includes five dinner recipes the whole family will love, with a nice variety to keep things interesting. Add a side dish or salad, and you have a complete meal!
