Make breakfast easy and delicious with this ooey-gooey Cinnamon Roll Casserole! It only takes a few minutes to assemble and half an hour to bake. And it’s packed with bits of cinnamon rolls, then topped with maple syrup and warm icing!

Cinnamon rolls are delicious any time of the year, but the craving really comes with back-to-school breakfasts and when the holidays roll around. This is perfect for Christmas brunch or an easy breakfast treat for a family gathering.

It has all the yumminess of classic cinnamon rolls made from scratch without all the work and using simple ingredients.

Ingredient Notes

  • Cinnamon rolls and icing: Use canned cinnamon rolls with icing packets to make this recipe super easy! If desired, make homemade cinnamon rolls for this recipe.
  • Eggs: Add four large eggs to get a fluffy and thick texture.
  • Cream: Pour in some heavy cream or half-and-half to help bind all the ingredients and bring a creamy flavor to the cinnamon casserole.
  • Vanilla: Add the vanilla extract to make the cinnamon roll bake filling extra sweet and richer in flavor.
  • Spices: Bring out the classic cinnamon roll taste by sprinkling in some cinnamon and nutmeg.
  • Butter: Use melted or softened butter to grease the pan.
  • Syrup: Cover the baked casserole with maple syrup to top it all off!

Variations and Substitutions

  • Add Bacon: Freshly fry thick strips of bacon until crisp, then crumble them and add to the bits of cinnamon roll and egg mixture, or sprinkle some on top after baking– Yum!
  • More Fall Flavor: If desired, add more warm fall spices, like allspice, ginger, or even a pumpkin spice mix, to the casserole for a boost of autumn taste!
  • Apple Cinnamon Roll Casserole: Chop a crisp apple into tiny pieces and add them to the casserole to bake into softened bites of apple mixed with gooey, syrupy cinnamon rolls. Top it all off with a sprinkle of brown sugar on top!
  • Flavored Icing: Make your own cinnamon icing or mix the packets of provided icing with a dash of cinnamon powder. Or, next time, try topping the casserole with cream cheese icing!

How To Make Easy Cinnamon Roll Casserole

Step 1 | Preheat oven and combine wet ingredients

Begin this delicious and easy recipe by preheating your oven to 350 degrees.

Next, add eggs, heavy cream, vanilla, cinnamon, and nutmeg to a large bowl and whisk them until combined. Set the egg mixture aside and move on to the following step.

Step 2 | Prep baking dish

Prepare a 9×13-inch baking dish by lightly coating the bottom in butter to prevent the casserole from sticking.

Step 3 | Cut cinnamon rolls

Next, unpackage and cut the cinnamon rolls into 1-inch pieces with kitchen scissors, a pizza cutter, or a knife, and place them into the prepared baking dish in an even layer. For now, set the icing packets or cups aside.

Step 4 | Coat cinnamon roll pieces with egg mixture

Now, pour the prepared egg mixture over the cinnamon roll pieces.

Then gently toss to coat.

Step 5 | Bake casserole, add syrup and icing

Then, slip the casserole dish into the oven and bake for 30-35 minutes or until the top becomes golden brown and slightly crunchy.

Once finished, remove it from the oven and drizzle the top with maple syrup.

Then, cut the ends of the icing packets and drizzle on top of the baked casserole.

If the icing is in a cup, remove the metal lid and slowly pour over the casserole.

Step 6 | Slice and serve!

Last but certainly not least, slice into this cinnamony goodness and serve fresh from the oven!

  • Soften the Icing – If the icing is still too cool, microwave on low power in a small bowl for 30-45 seconds to soften.
  • Evenly Mix– Ensure the egg mixture is evenly mixed into the casserole for the best results.
  • No Icing? No Problem! Make your own easy icing with vanilla, milk or water, and powdered sugar.

Cinnamon rolls can be served as dessert or breakfast! This cinnamon roll casserole recipe moves more into the breakfast category, though. 

Can you use milk instead of heavy cream for cinnamon roll casserole?

Sure! Whole milk would be best. Reduce the measurement some, and you’re good to go. Remember that milk will make the cinnamon roll breakfast bake less creamy than cream or half-and-half.

Can you use frozen cinnamon roll dough for a cinnamon roll casserole?

Yes– If preferred, you can absolutely use your favorite brand of frozen dough instead of refrigerated. Allow them to thaw enough to cut them into small pieces, then continue the recipe, adjusting the cooking time if necessary.

Storage

Refrigerate: In an airtight container, leftover cinnamon roll casserole will last up to four days in the refrigerator.

Freeze for Long-term Storage: If preferred, you can freeze the casserole by covering it in plastic wrap and transferring it to a freezer-safe bag or container. Freeze the recipe for up to 2 months.

Make-Ahead Instructions. Prepare the casserole minus the icing and syrup and store overnight in the fridge. Remove to the countertop while preheating and bake according to instructions. You may need to add 5 more minutes.

Make this breakfast Cinnamon Roll Casserole recipe with just a few ingredients and a few minutes – packed full of cinnamon rolls and topped with maple syrup and icing!

Ingredients 

  • 2 cans cinnamon rolls and icing packets, (12.4 ounce cans)
  • 4 large eggs
  • ½ cup heavy cream, (or half and half)
  • 2 teaspoons vanilla extract
  • ½ teaspoon cinnamon
