Is it just me, or does October always feel like it hits full swing fast? The air is crisp (well, slightly in FL), the evenings come quicker, and cozy meals start calling our name. This week’s lineup leans into all that fall flavor — without adding more to your plate (except the delicious kind!).

From rich, slow-simmered Beef Ragu to a crave-worthy Broccoli Cheddar Chicken Casserole, every recipe is made to be simple, satisfying, and family-friendly. And of course, we’re ending the week on a sweet note with Pumpkin Cheesecake Bars that taste like fall in dessert form.

This Week’s Tips for Success

Monday: Beef Ragu

  • Meal Prep Tip: Chop onions and carrots ahead of time or buy them prechopped. The beef can be made in advance and refrigerated or frozen. You can even prep on Sunday and place it in the slow cooker on Monday morning.
  • Customization: Serve with pasta, polenta, mashed potatoes, or even zucchini noodles for a low-carb option.

Tuesday: Mexican Street Corn Pasta Salad

  • Meal Prep Tip: Mix the dressing ahead and store separately until ready to toss.
  • Customization: Add rotisserie or grilled chicken, black beans, or shrimp to make it a meal.

Wednesday: Broccoli Cheddar Chicken Casserole

  • Meal Prep Tip: Use rotisserie chicken and pre-chopped broccoli for a faster prep.
  • Customization: Swap in cauliflower or add cooked rice to stretch it further.

Thursday: Crustless Spinach Quiche

  • Meal Prep Tip: Whisk eggs and shred cheese ahead of time — store in the fridge until ready to bake. You can also always pour this into a freezer or refrigerated crust.
  • Customization: Add chopped ham, mushrooms, or cooked sausage for a heartier version.

Friday: Oven Fried Panko Crusted Chicken Drumsticks

  • Meal Prep Tip: Make the coating mixture ahead. You can coat drumsticks in the breading ahead of time and refrigerate them on a wire rack until ready to bake. I prefer to make them fresh so they are extra crispy; however, it is an option.
  • Customization: After you have tried this amazing blend of seasonings (it’s that good), try different seasoning blends (ranch, cajun, lemon pepper) to change it up.

Dessert: Pumpkin Cheesecake Bars

  • Meal Prep Tip: These bars are best chilled — make a day ahead for an easy dessert that’s ready when you are.
  • Customization: Top with whipped cream and a sprinkle of cinnamon or crushed pecans.

Each meal plan includes five dinner recipes the whole family will love, with a nice variety to keep things interesting. Add a side dish or salad, and you have a complete meal!
