Gather the simple ingredients, wash the fruit and veggies, chop, and get ready to assemble this easy meal. Then, place all the fresh ingredients on the cutting board into a large bowl and stir.

*Pro-tip: If you have a bit more time, roasting the pecans is a great way to add extra flavor! Just chop the nuts, and toast them in the oven while you pull or shred the tender chicken.

  • Chicken Salad Chick Fancy Nancy – Copycat: Add in about ¾ cup of diced apples. You may also want to pulse the chicken a couple of times in a food processor to get the same texture as theirs. I usually leave my a little larger.
  • Lighten it up! Use plain Greek yogurt or sour cream instead of mayo and serve over lettuce. This will change the overall taste, though.
  • Try different ways to garnish. Add fresh herbs, roasted pecans, a sprinkle of paprika, a spoonful of brown sugar, and more. You can even make it a curried chicken salad by adding curry powder to taste.
  • Swap the nuts. You can try walnuts or almonds. Cashews are nice too.
  • Add some tang or spice. I sometimes like to add a teaspoon or two of Dijon, spicy ground mustard, or even cayenne for a hint of heat.

Ingredients 

  • 4 cups cooked chicken - shredded or cubed
  • ½ cup diced celery
  • ½ cup chopped pecans
  • 1 cup seedless grapes - halved or quartered, red or green will work
  • 1 to 1 ¼ cup mayonnaise
  • 1 to 1 ½ teaspoon ranch seasoning mix - optional, but highly recommended
  • ½ teaspoon black pepper - or to taste
  • salt - to taste

Instructions 

  1. Add chopped chicken to a large bowl along with celery, grapes, chopped pecans, mayonnaise, ranch seasoning mix, salt and pepper. Stir together until just combined.
  2. Taste and adjust seasoning to taste.
  3. Serve over a bed of lettuce or on bread or a croissant for a chicken salad sandwich.

Nikki’s Tips
  • Start with flavorful chicken to begin with. I usually use a flavored rotisserie for easy cooking, or make sure my chicken is seasoned nicely when cooking. 
  • If you like the chicken finely chopped, pulse it in a food processor until you get your desired consistency, then mix in the mayo and seasonings.
  • Start with less mayonnaise and then add more to taste. I usually use all of the listed ingredients, but if you prefer less mayo, start with ¾ cup and add a tablespoon at a time to taste.
  • The ranch seasoning is optional, but if you like Chicken Salad Chick’s Fancy Nancy chicken salad, you will like this addition. It doesn’t make the chicken salad taste like ranch, but it gives it a delicious flavor. Adjust this amount to your taste. They also add chopped apples, use about ¾ cup of diced apples. Adjust mayo if needed to taste.
  • Remember, the flavors will develop as this sits in the refrigerator.
  • Pick nice, firm grapes for extra crunch. Red or Green Seedless grapes are both delicious.

    I like to add very thin slices of onion, red or otherwise, and sometimes I like to add a little red wine vinegar to the mayo just to mix it up a bit. Even when I don’t have grapes on hand, I love this chicken salad.
