This smoky Chipotle Lime Vinaigrette brings that same bold, tangy-sweet flavor we all crave, but with simple, wholesome ingredients you can pronounce. No mystery fillers—just real, clean flavor that’s perfect drizzled over taco salads, burrito bowls, grilled shrimp, or roasted veggies.

Step 1: Add everything to the blender

Add lime juice, chipotle peppers in adobo, avocado oil, honey, cumin, and salt to your blender or food processor.

What if I don’t have a blender?

A food processor works great too. No gadgets? Just finely chop the chipotle peppers and whisk everything together—or use a mortar and pestle to mash them into a paste first. It won’t be as silky smooth, but the flavor still shines..

Can I use this as a marinade?

Absolutely! It’s fantastic on chicken, shrimp, or even roasted veggies. Just marinate for 15–30 minutes before cooking.

Storage, Make-ahead & Freezing

Make‑ahead: This dressing is ideal to prep in advance. Blend it up and store in a jar in the fridge, ready whenever you need it.

Storage: Keep it refrigerated. Because it’s oil‑based, you’ll likely see separation—just give it a good shake before each use. It should stay good for up to 1 week.

Freezing: Want longer storage? Pour into an ice cube tray, freeze solid, then transfer the cubes into a freezer bag. Thaw just what you need in the fridge, then shake well before serving.

Ingredients
 

  • cup fresh lime juice
  • 1-2 tablespoons chipotle peppers with adobo sauce
  • ½ cup avocado oil
  • 1 tablespoon honey
  • 1 teaspoon cumin
  • ½ teaspoon kosher salt

Instructions
  

  1. To a blender or in a food processor: lime juice, chipotle peppers with adobo sauce,avocado oil, honey, cumin, and kosher salt. Pulse until well combined and peppers are finely chopped.
  2. Pour into a mason jar or salad dressing jar with a lid. Store in the refrigerator.
  3. When ready to use, let it come to room temperature and shake vigorously to combine.
