While the rice is cooking, heat some oil in a large skillet over medium-high heat and add your seasoned chicken.

Next, mix diced tomato, half of the diced red onion, lime juice, and cilantro in a bowl and set aside.

Get ready to dig into these scrumptious and satisfying Chicken Burrito Bowls. Tender, juicy chicken is coated in a blend of savory spices before being grilled to perfection and paired with fluffy cilantro lime rice, black beans, fresh pico de gallo, and corn salsa. Each bite is bursting with bold and zesty flavors, as well as a variety of textures and flavors!

Ingredients 

  • 1 cup cooked rice
  • 1 tablespoon oil
  • 2 chicken breasts, boneless, skinless
  • ½ teaspoon cumin
  • ½ teaspoon paprika
  • salt, to taste
  • pepper, to taste
  • 2 tomatoes, diced
  • 1 small red onion, (divided)
  • ½ cup lime juice, (divided)
  • ¼ cup chopped cilantro
  • 1 can corn, drained
  • 1 jalapeño, seeded, deveined, and diced
  • 1 can black beans, drained

Instructions

  • Cook the rice according to the package instructions. Set aside.
  • In a small bowl, mix cumin, paprika, salt, and pepper together. Sprinkle over both sides of the chicken breasts.
  • In a large skillet, heat the oil over medium-high heat. Add the seasoned chicken and cook until browned and cooked through (the internal temperature reaches 165℉ or for about 5-7 minutes).
    Remove to a cutting board. Let the chicken rest for 5 minutes and then cut the chicken into strips or pieces.
  • In a medium bowl, add the diced tomato, half of the diced red onion, ¼ cup lime juice, and ⅛ cup of cilantro and mix together. Set aside.
  • In a separate bowl, add the corn, diced jalapeño, and the other half of the red onion, and stir together, set aside.
  • Warm the black beans and season with salt.
  • Add the remaining lime juice and cilantro to the rice and stir together until fluffy.
  • Assemble the bowls by adding rice, chicken, pico de Gallo, corn salsa, and black beans in sections in a bowl. Add desired toppings like cheese, avocado, sour cream, and salsa.
  • Garnish with chopped cilantro and serve with lime wedges on the side. Enjoy!
