This week’s meal plan keeps things simple, flexible, and full of flavor, exactly what busy spring days call for. You’ll find a mix of easy casseroles, slow cooker dinners, lighter options, and a fun burger night that breaks up the routine.

It’s a lineup that works whether you’re cooking every night or mixing in leftovers, with meals that feel doable and still worth sitting down for. And to end the week, there’s a fresh strawberry cake that feels just right for the season.

This Week’s Tips for Success

Monday: Hamburger Hash Brown Casserole
Meal Prep Tip: Brown the ground beef ahead of time so dinner comes together quickly.
Customization: Add mixed veggies or an easy side to make it even heartier.

Tuesday: Slow Cooker Salsa Chicken
Meal Prep Tip: Make a double batch and use it for multiple meals or lunch prep throughout the week — tacos, bowls, salads, or wraps. It’s great to freeze for a ready grab protein.
Serving Idea: Use for tacos, bowls, salads, or wraps throughout the week.

Wednesday: Mediterranean Orzo Salad
Meal Prep Tip: Cook the orzo earlier in the day and chill until ready to toss.
Customization: Add grilled chicken or chickpeas for extra protein.

Thursday: Ground Chicken Burgers
Meal Prep Tip: Form the patties ahead of time and refrigerate until ready to cook.
Customization: Serve on buns, lettuce wraps, or over a salad.

Friday: Philly Cheesesteak Sloppy Joes
Meal Prep Tip: Chop peppers and onions ahead of time for faster cooking or you can buy them prepped in the produce section.
Customization: Add mushrooms or extra cheese for more flavor.

Weekend Treat: Almond Strawberry Layer Cake
Make-Ahead Tip: Bake the cake layers a day ahead and assemble when ready.
Fun Idea: Top with fresh strawberries for a simple, beautiful finish. I used edible grass and a chocolate cross for Easter; you could also use a bunny.
