why you’ll love these Turkey & Stuffing Roll Ups

Nikki in the kitchen with key lime tarts on the counter.

My mom has always loved turkey and dressing, and honestly, so do I. But let’s be real, we don’t always have time (or energy) to make a full Thanksgiving spread. That’s exactly why I created this recipe. It brings all the familiar flavors we love, but in a way that’s doable on a weeknight.

It’s also a great option when you want that holiday feel without pulling out all the stops — or when you’re feeding the family on a budget. Whether you’re fixing a plate for yourself or feeding the whole crew, this one’s a go-to.

Here’s what makes it special:

Flavor-packed: Savory stuffing, tender turkey, and creamy gravy bake together in every bite.

Simple and practical: A quick stovetop stuffing, then everything bakes up in one dish.

Budget-friendly holiday vibes: Perfect for weeknights, small gatherings, or when you want Thanksgiving dinner without the price tag or prep.

Nikki’s Top Tips Before You Start…

  • Ask your deli for thick, “nice‑roundish” turkey slices so they hold the stuffing well (thin or narrow slices may not roll up nicely).
  • Use all of the stuffing blend; the amount per roll may vary depending on the thickness of each turkey slice.
  • Spray your baking dish lightly with nonstick spray so nothing sticks and clean‑up stays simple.
  • Be sure to cover the dish tightly with foil for baking to keep it from drying out.

Ingredients Needed

  • Stovetop stuffing mix: Using a ready box saves time — either chicken or turkey flavour works well. You could swap for an herb stuffing mix if you prefer.
  • Chicken broth & butter: This combo brings the stuffing to life, buttery, and full of flavor. It keeps everything moist and delicious, just like you want it.
  • Turkey gravy (or chicken gravy): A glass jar of gravy keeps things quick. You could substitute chicken gravy with similar results.
  • Cream of chicken soup: Adds creaminess and helps hold everything together under the gravy.
  • Thick-cut deli turkey slices: I look for 3.5–4 oz slices at the deli (this will vary by deli) — good quality makes a significant difference in flavor and texture. Sam’s and Costco also have great options.
  • Garnish – cracked black pepper & parsley: Simple but adds freshness and a final polish.

How To Make Turkey Roll Ups with Stuffing

Be sure to see the recipe card below for exact ingredients and full recipe instructions!

Step 1 | Prep the Baking Dish

Preheat oven to 350 °F. Lightly spray a 13×9‑inch baking dish with nonstick spray.

Step 2 | Prepare the Stuffing

In a medium saucepan, combine the chicken (or turkey) broth and butter. Bring to a boil, stir in the stuffing mix, then turn off the heat.

Cover, and let it rest for about 30 seconds so the stuffing absorbs the liquid.

Step 3 | Assemble the Roll‑Ups

Lay the turkey slices out on a flat surface. Take approximately ¼ cup of the stuffing mixture (divide it evenly into 8 parts) and place it down the middle of each slice. Roll up each slice and place seam‑side down into the prepared baking dish. Continue until all slices are used.

Step 4 | Make the Sauce

In a large mixing bowl, whisk together the turkey (or chicken) gravy until smooth, then whisk in the cream of chicken soup until the combination is fully smooth and combined.

Variations and Substitutions

  • Stuffing swap: Instead of a boxed stuffing mix, you could use a homemade bread stuffing or herb stuffing. Or use leftover cornbread dressing from the holidays.
  • Gravy alternative: Use chicken gravy or make a simple homemade gravy if you prefer.
  • Soup variation: Swap cream of chicken soup for cream of mushroom or cream of celery for a slight flavour twist.
  • Meat alternative: If turkey slices are unavailable or another option is preferred, you can use chicken breast slices instead. You can also pound pork loins very thin and bake them. Adjust the cooking time until the pork cutlets are cooked through.
  • Vegetarian version: Use large zucchini or portobello caps instead of turkey slices, vegetable broth, and vegetarian “meaty” stuffing/gravy options.
  • Side changes: Instead of mashed potatoes, try cauliflower mash, rice, or polenta as the base.

Recipe FAQs

Can I use leftover cooked turkey instead of deli turkey slices?

Yes — you can use leftover cooked turkey, though you’ll want to slice it just thick enough so it can be rolled.

How do I know it’s safe to serve?

Because you’re using pre‑cooked turkey slices and pre‑made components, you’re really just heating the dish through. Ensure the internal temperature reaches approximately 165°F when reheating for food safety — the USDA recommends a minimum internal temperature of 165°F for reheating leftovers.

Storage & Make-ahead Instructions

Make‑Ahead: You can assemble everything the day before (keep the sauce in a separate container), cover, and keep in the fridge. When ready to bake, pour the sauce on them and bake. Keeps cooking time close to original.

Refrigerator: After cooking, let the dish cool completely. Cover and store in the fridge for up to 3–4 days. Reheat individual portions in the microwave or reheat the full dish in the oven at 325°F until warmed through.
