The week between Christmas and New Year’s always feels like a little pause, a chance to slow down, reset, and enjoy a gentler pace before the fresh start ahead. It’s one of my favorite times to keep meals simple, comforting, and easy to pull together, especially when the days blur a bit and routines are still finding their way back.

Whether you’re soaking in the quiet, wrapping up loose ends, or already gearing up for a new year, having a few dependable dinners ready to go can make this stretch feel so much smoother. This week’s meal plan is all about taking the pressure off so you can ease through the last days of December with good food and plenty of breathing room.

This Week’s Tips for Success

Monday: Crack Chicken Casserole with Pasta
Meal Prep Tip: Cook your pasta and prep the chicken earlier in the day for fast assembly.
Customization: Add broccoli or peas if you want a veggie boost.

Tuesday: Creamy Mexican Spinach (Espinaca)
Meal Prep Tip: This comes together quickly — chop ingredients ahead to make it even faster.
Serving Idea: Enjoy meatless, as a side, or add in cooked chicken and bake for a complete meal casserole. I also grab rotisserie chicken and serve that along with Mexican Rice for a delicious dinner.

Wednesday: Bloody Mary Chili
Meal Prep Tip: Brown your meat earlier in the day to make dinner a breeze.
Customization: Adjust the heat level based on your favorite Bloody Mary mix.

Thursday: Southern Black-Eyed Peas
Meal Prep Tip: Soak peas ahead if needed. I also have a slow cooker black eyed pea recipe and Instant Pot Black Eyed Peas.
Serving Idea: Serve with cornbread , fried pork chops, and greens for a traditional New Year’s meal.

Friday: Pizza Pasta Bake
Meal Prep Tip: Prep the noodles and brown the meat earlier for a quick Friday dinner.
Customization: Add pepperoni, mushrooms, or olives for extra “pizza night” fun.

Treat: Biscoff Cheesecake Bars
Make-Ahead Tip: These bars chill beautifully — perfect for prepping ahead of New Year’s Eve.
Fun Idea: Top with extra Biscoff crumbs or a drizzle of melted cookie butter.

Each meal plan includes five dinner recipes the whole family will love, with a nice variety to keep things interesting. Add a side dish or salad, and you have a complete meal!
