As we roll toward Thanksgiving, I know weeknights get a little busier and a lot fuller. This week’s menu keeps things simple, fresh, and full of flavor — think crisp salads, quick pasta, easy skillet meals, and a classic cookie to sweeten the weekend. These are the kinds of dinners that make the in-between days feel easy.

This Week’s Tips for Success

Monday: Beef Tips and Gravy
Meal Prep Tip: Cut and season the beef earlier in the day so dinner comes together quickly.
Customization: Serve over mashed potatoes, rice, or egg noodles — whatever your family prefers.

Tuesday: Air Fryer Buffalo Chicken Quesadillas
Meal Prep Tip: This recipe starts with rotisserie chicken, so pick one up earlier in the week to make assembly even quicker.
Customization: Go with a mild buffalo sauce or add a little ranch drizzle if you need a gentler version for younger kiddos.

Wednesday: Shrimp and Chicken Fried Rice
Meal Prep Tip: Day-old rice works best — cook it the night before if possible.
Customization: Add extra veggies like peas, carrots, or broccoli.

Thursday: Chinese Chicken Salad
Meal Prep Tip: Chop lettuce and veggies ahead of time and keep the dressing separate until serving.

Customization: Swap spicy sausage for mild to adjust the heat.

Weekend Treat: White Chocolate Macadamia Nut Cookies
Make-Ahead Tip: Make sure to allow time to chill the dough or freeze scooped dough balls for later.
Fun Idea: Add a sprinkle of flaky salt on top before baking for a sweet-salty finish.
