Fall is in full swing, and this week’s menu is all about cozy comfort and easy family favorites. From a slow-simmered Italian pot roast to a cheesy Doritos casserole and a fun Halloween treat for the weekend, these recipes keep things simple, hearty, and stress-free.

This Week’s Tips for Success

Monday: Italian Pot Roast (Stracotto)
Meal Prep Tip: Brown the roast and chop veggies the night before to save time in the morning. You can make this the day before and have it ready to warm or prep and put in the slow cooker.
Serving Idea: Serve over creamy parmesan polenta, mashed potatoes, or buttery noodles for a hearty start to the week.

Tuesday: Ground Beef Doritos Casserole
Meal Prep Tip: Brown your ground beef ahead of time and store it in the fridge for up to two days.
Customization: Use Cool Ranch Doritos for a fun twist or substitute ground turkey for a lighter option.

Wednesday: Egg Roll Soup
Meal Prep Tip: Shred the cabbage and carrots in advance to make this weeknight meal a breeze. You can also use a slaw mix, but the bites will be much finer in the soup.
Customization: Use ground chicken or turkey if you prefer, and add extra veggies like mushrooms or bok choy.

Thursday: Overnight Breakfast Casserole
Meal Prep Tip: This casserole should be made the night before, then all you have to do is bake it after work.
Customization: Swap sausage for ham or bacon, or toss in some diced peppers for extra color.

Friday: Instant Pot Meatloaf and Potatoes
Meal Prep Tip: Mix your meatloaf in the morning (or the night before) and shape it, then refrigerate until ready to cook.
Customization: Add a bit of BBQ sauce to the glaze for a smoky-sweet flavor twist.

Weekend Treat: Mummy Rice Krispie Treats
Make-Ahead Tip: These can be made a couple of days ahead—just store them in an airtight container.
Fun Idea: Let the kids drizzle on the “mummy wraps” and add candy eyes for a spooky weekend activity.
