This Breakfast Casserole with Biscuits is the kind of hearty Southern breakfast that makes mornings a breeze. Fluffy eggs, savory sausage, crispy bacon, and buttery biscuit pieces bake together into one comforting dish that’s easy to make and perfect for brunch or busy weekends!

If you know me, you know I’m a big fan of a good casserole. They’re perfect for feeding the whole family in one go, and honestly, they’re just about the easiest way to get a delicious meal on the table! This biscuit breakfast casserole is another one of my family’s longtime favorites. It brings together fluffy eggs, savory sausage and bacon, and buttery biscuit pieces… what’s not to love?!

One of my favorite little twists is baking this casserole in a bundt pan instead of a traditional baking dish (though you can absolutely make it in a 9×13 dish). Not only does it cook beautifully, but it comes out looking downright gorgeous on the table!

And using refrigerated biscuits is one of my favorite Southern shortcuts. It makes this recipe quick, satisfying, and perfect for busy mornings!

Many breakfast casseroles take a lot of prep or require multiple dishes to come together. This version keeps things simple by using refrigerated biscuits and a single bowl, giving you a hearty breakfast without the extra fuss!

  • Don’t overfill the bundt pan. Make sure to leave a little space at the top since the eggs will puff slightly while baking. This helps prevent spills in the oven!

  • Bacon: Crispy bacon adds a little crunch throughout the dish! For ease, you can use microwaveable bacon.
  • Shredded Cheddar Cheese: Sharp cheddar melts beautifully and adds rich, cheesy goodness in every bite.
  • Green Onions: On top as garnish!
  • Sausage Gravy or Maple Syrup: Feel free to serve some sausage gravy or maple syrup on the side!

Step-by-Step Instructions

Step 1 | Crisp the Bacon

Cook bacon and sausage,  set aside on a paper towel to drain.

Step 2 | Preheat & Prep the Bundt Pan

Preheat the oven to 350℉.  Spray a bundt pan with cooking spray and set aside.

Step 3 | Prep the Biscuits

Cut biscuits into 9 small pieces. It will look like a tic-tac-toe board.

Eggs, milk and spices whisked together in a large bowl.

Step 4 | Whisk the Egg Mixture

In a large bowl, whisk eggs, then whisk in mustard, salt, pepper, and milk. 

Step 5 | Combine the Casserole Ingredients

Stir in cooked bacon, sausage, cheese, and biscuit pieces.  Stir well to mix everything together.

Step 6 | Bake

Pour egg mixture into bundt pan.  Bake uncovered for 30 – 40 minutes.

Step 7 | Rest & Enjoy

Carefully loosen sides with a knife.  Let the bundt rest in the pan for 5 minutes. Flip onto serving platter.

Variations and Substitutions

  • Sausage: Turkey sausage or chicken sausage works well if you’d like a slightly lighter version while still keeping plenty of savory flavor.
  • Chicken Biscuit Casserole: Use chopped chicken tenders or chicken bites.
  • Ham: Use diced or leftover ham instead of sausage and bacon. Or in addition to, have a meat lover’s casserole.
  • Cheese: Try it with pepper jack or Monterey jack cheese. Switching the cheese can add a little spice or create a milder flavor, depending on your preference.
  • Add-ins: Bell peppers, spinach, onion, or sliced mushrooms make great additions if you want to add a little color and extra flavor.
  • Make it in a casserole dish: If you don’t have a bundt pan, simply bake it in a greased 9×13 baking dish instead.

Expert Tips

  • Cut the biscuits into even pieces. Dividing each biscuit into nine small squares helps them distribute evenly throughout the casserole. This ensures every bite gets the perfect amount of fluffy biscuit!
  • Test for doneness in the center. Insert a knife into the thickest part of the breakfast casserole with biscuits; if it comes out clean, it’s ready to serve!
  • Let the casserole rest before flipping. Allow it to sit in the pan for about five minutes after baking. This helps the casserole firm up so it releases cleanly when you invert it onto your serving platter.

What to Serve with

This breakfast casserole in a bundt pan can be served on its own or with a larger spread! I love it with Strawberry Parfaits, Berry Fruit Salad, or even a side of Grits!

It is also absolutely delicious with some Sausage Gravy on top!

Storage and Make Ahead

  • To store: Cover leftovers and refrigerate for up to 3 to 4 days. Reheat slices in the microwave or oven until warmed through.
  • To freeze: Slice the casserole and wrap individual portions tightly. Freeze for up to 2 months, then thaw overnight in the refrigerator before reheating.
  • To make ahead: You can assemble the casserole the night before and store it covered in the refrigerator. Bake it fresh in the morning for an easy brunch.

  • 1 16 ounce can grand biscuits
