These are recipes I actually cook and trust, and I have been putting these plans together every single week for years. New here or a regular, the goal is always the same. Good food, less stress, more time for everything else.

This Week’s Tips for Success

Monday: Chicken and Dirty Rice Skillet
Meal Prep Tip: Mix up the marinade the night before and let the chicken sit in the fridge so all you have to do Monday is sear and bake.
Customization: Swap the andouille sausage for a milder smoked sausage if you want to dial back the heat.

Tuesday: Tex Mex Salad
Meal Prep Tip: Chop the veggies and mix the dressing up to two days ahead, just keep everything separate until you are ready to eat.
Customization: Use rotisserie chicken instead of cooking your own to make this even faster on a busy night.

Wednesday: Baked Potato Skins Recipe
Meal Prep Tip: Bake the potatoes and scoop them ahead of time, then just add the cheese and bacon and pop them back in the oven when you are ready to eat.
Customization: Top with sour cream and green onion, or swap in your favorite taco toppings for a fun twist.

Thursday: Stuffed Pepper Meatloaf Recipe
Meal Prep Tip: Mix the meatloaf mixture the night before and store it covered in the fridge so all that is left to do is shape it and bake.
Customization: Stir a handful of shredded cheese into the meat mixture for an extra cheesy twist.

Friday: Greek Chicken with Yogurt Marinade
Meal Prep Tip: Marinate the chicken in the morning or the night before, but do not go past a few hours or the texture can get too soft.
Customization: Serve it over greens with feta and cucumber for a lighter end to the week.

Dessert: Chocolate Delight Dessert
Meal Prep Tip: Make this a day ahead so the layers have plenty of time to chill and set before serving.
Customization: Leave the pecans out of the crust for a nut-free version, or swap in your favorite pudding flavor.

Each meal plan includes five dinner recipes the whole family will love, with a nice variety to keep things interesting. Add a side dish or salad, and you have a complete meal!
