By the end of January, most of us are back in the swing of real life — busy days, full calendars, and the nightly question of what’s for dinner. This week’s meal plan is built for that season. These are dependable, familiar meals with good flavor and simple prep, giving you a mix of cozy soups, easy casseroles, and classic dinners you know your family will enjoy.

Nothing complicated, just solid meals you can count on — plus a sweet cake to finish the week on a high note.

This Week’s Tips for Success

Monday: Shake and Bake Chicken
Meal Prep Tip: Make your shake and bake mixture ahead of time and store until ready to bake.
Customization: Serve with mashed potatoes, rice, and green beans.

Tuesday: Chicken Tortilla Soup
Meal Prep Tip: Prep toppings like shredded cheese, tortilla strips, and avocado ahead of time.
Customization: Adjust the spice level with mild or hot Rotel.

Wednesday: Authentic Cuban Sandwich
Meal Prep Tip: Prep the Cuban pork in the oven on the weekend, or use my slow-cooked mojo pork; slice everything earlier in the day for quick assembly. Or you can buy it from your deli.
Serving Idea: Serve with chips, pickles, or a 1905 salad.

Thursday: French Onion Ground Beef and Rice Casserole
Meal Prep Tip: Brown the beef ahead of time so this casserole comes together quickly.
Customization: Add mushrooms, cheese, and crispy fried onions or jalapenos if your family loves them.

Friday: Minestrone Soup
Meal Prep Tip: Chop veggies ahead of time to make dinner easy.
Customization: Use whatever vegetables you have on hand.

Weekend Treat: Strawberry Crunch Cake
Make-Ahead Tip: Bake a day ahead and chill for easy slicing.
