June has a way of shifting things a little, doesn’t it? The days are longer, the pace feels different, and somehow dinner still has to happen every single night. Having a weekly meal plan ready to go before the week starts is honestly one of the best things you can do for yourself this time of year.

This week has a really good mix going on. There’s something bold and flavorful, a couple of lighter options that feel just right for warmer weather, and a dessert that could not be easier to throw together. Grab your grocery list this weekend, and you’re set up for a great week ahead.

This Week’s Tips for Success

Monday: Roast Cuban Pork (Oven Roasted Mojo Pork)
Meal Prep Tip: Mix the mojo marinade over the weekend and let the pork marinate overnight for the best flavor. The longer it sits, the better it gets.
Customization: Use the leftovers in tacos, rice bowls, or sandwiches later in the week.

Tuesday: Sausage and Cheese Grits Casserole
Meal Prep Tip: Brown and crumble the sausage ahead of time and shred your cheese so Tuesday night assembly is quick and easy. This one is best fresh from the oven, so skip the full make-ahead on this one.
Customization: Swap the sausage for a spicy variety if your family likes a little heat, or use turkey sausage to lighten it up.

Wednesday: Strawberry Salad with Lemon Vinaigrette
Meal Prep Tip: Make the lemon vinaigrette ahead of time and store it in a jar in the fridge. Slice the strawberries the morning of so they stay fresh.
Customization: Add grilled chicken or shrimp to make it a full meal.

Thursday: Slow Cooker Chicken and Gravy
Meal Prep Tip: Set this one up in the morning and let it do all the work. It’s ready when you are, and the house will smell amazing.
Customization: Serve over mashed potatoes, rice, or egg noodles. All three work great with that gravy.

Friday: BBQ Chicken Salad
Meal Prep Tip: Use rotisserie chicken to make this a no-fuss Friday dinner. Chop everything ahead and toss it together right before serving.
Customization: Swap out the greens for coleslaw mix if you want something heartier, or add avocado for a creamy finish.

Dessert: Cherry Pineapple Dump Cake
Meal Prep Tip: This comes together in minutes and bakes while dinner is winding down.
Customization: Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream for an easy, crowd-pleasing treat.
