By late March, it’s nice to have a mix of lighter meals and hearty favorites that still feel satisfying. This week’s menu brings a little variety to the table — from fresh tacos and a simple sandwich night to a comforting hash and a flavorful takeout-style dinner at home.

It’s a balanced lineup that keeps things interesting without adding extra work, plus a sweet treat at the end of the week that’s perfect for sharing.

This Week’s Tips for Success

Monday: Collard Greens Wrapped Pork Roast
Meal Prep Tip: Wrap the pork roast and prep everything the night before so you can place it straight into the slow cooker in the morning.
Serving Idea: Pair with rice pilaf or easy loaded mashed potatoes.

Tuesday: Carne Asada Tacos
Meal Prep Tip: Marinate the steak ahead of time for the best flavor.
Customization: Serve with tortillas, bowls, or over salad greens.

Wednesday: Cucumber Sandwiches
Meal Prep Tip: Prep the spread and slice cucumbers ahead of time.
Serving Idea: Serve with fruit or soup for a light, easy dinner.

Thursday: Corned Beef Hash
Meal Prep Tip: Use leftover corned beef if you have it to make this extra easy.
Customization: Top with a fried egg for a complete meal.

Friday: Orange Chicken
Meal Prep Tip: This recipe uses pre-breaded chicken pieces, so you can skip extra prep and get dinner on the table fast. (I also have instructions if you want to make your own)
Serving Idea: Serve over rice or noodles with steamed broccoli.
