Ingredients 

Honey Mustard Sauce
  • ½ cup honey
  • 3 tablespoons Dijon mustard
  • 2 tablespoons light brown sugar - packed
  • 2 tablespoons apple cider vinegar
  • ½ teaspoon onion powder
  • teaspoon cayenne pepper
  • ½ heavy cream
Chicken
  • 2 large eggs
  • 1 tablespoon heavy cream
  • 1 ½ teaspoons fine sea salt
  • ½ teaspoon black pepper
  • 4 boneless skinless chicken breasts - about 6 oz each
Pecan Coating
  • 1 ½ cups panko breadcrumbs
  • 1 cup finely chopped pecans
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon dry mustard powder
  • ½ teaspoon dried thyme leaves
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • 2 tablespoons unsalted butter - melted

Instructions 

  1. Preheat the oven to 425°F. Line a large baking sheet with parchment paper and place a wire rack on top. Lightly coat the rack with cooking spray.
  2. Add the honey, Dijon mustard, apple cider vinegar, brown sugar, and onion powder to a small saucepan. Whisk until well combined.
  3. Place the saucepan over medium heat and stir occasionally until the mixture comes to a gentle simmer. Continue cooking for 2-3 minutes, or until the brown sugar has completely dissolved and the sauce is smooth.​
  4. Reduce the heat to medium-low and slowly whisk in the heavy cream until fully incorporated.
