As we head into the last week of September, routines are settling in—but the busy evenings haven’t slowed down a bit. If your days are feeling full and you’re craving a little more ease around dinnertime, this week’s plan is here to help.

We’re starting the week with Slow Cooker Mississippi Pot Roast (set it and forget it), adding quick-prep favorites like Teriyaki Chicken and a light, refreshing Greek salad, and finishing with cozy, hearty meals like Bangers and Mash and Chicken and Dirty Rice Skillet. That one takes a little more time in the oven, but it’s full of bold, comforting flavor and so worth it.

And to sweeten the week? A loaf of homemade Buttermilk Banana Bread that’s just right for breakfast, snack time, or dessert.

This Week’s Tips for Success

Monday: Slow Cooker Mississippi Pot Roast

  • Meal Prep Tip: Assemble everything in the crock the night before and refrigerate. Just pop it in the slow cooker the next morning — easy!
  • Customization: Don’t have pepperoncini? Banana peppers or mild pickled jalapeños work great for a similar zing.

Tuesday: Chopped Greek Salad

  • Meal Prep Tip: Chop your veggies and make the dressing ahead of time. Store separately and toss when ready to serve.
  • Customization: Make it a meal by adding rotisserie chicken, Greek Chicken, or grilled shrimp. Or keep it light as a side dish.

Wednesday: Teriyaki Chicken

  • Meal Prep Tip: Marinate the chicken the night before for extra flavor and easier meal time prep.
  • Customization: Swap thighs for breasts, or try it with salmon or tofu for a different twist. Serve with rice or steamed veggies.

Thursday: Bangers and Mash with Onion Gravy

  • Meal Prep Tip: You can prep the mashed potatoes (or make Instant Pot Mashed Potatoes), and there’s no shame in those from the refrigerated section for a weeknight shortcut.
  • Customization: Use any sausage you love — chicken, turkey, or plant-based. Don’t skip the gravy — it brings it all together!

Friday: Chicken and Dirty Rice Skillet

  • Meal Prep Tip: Dice the veggies and season the chicken ahead to make cooking time smoother. You can always buy them chopped in the produce section or freezer section in the grocery store. This one’s a great weekend-style dinner but simplified for the week.
  • Customization: Use andouille sausage instead of chicken, or add bell peppers for extra color and kick.

Weekend Treat: Buttermilk Banana Bread

  • Meal Prep Tip: Bake it ahead and wrap tightly for grab-and-go breakfasts or snacks all week. It freezes beautifully, too!
  • Customization: Add chocolate chips or walnuts — or both! You can also make it into muffins for easy portioning.
