Italian sausage and cheese tortellini team up in a simple cream sauce, and the whole thing is ready in about 20 minutes with only one skillet to clean.

- Bulk Italian sausage: Spicy or mild, whichever your family prefers. If you can only find sausage links, just remove the casings before cooking.
- Marinara sauce: A jarred wine-based marinara adds good depth here without any extra work. Swap in a spicy, garlic, or mushroom variety to change up the flavor without changing the recipe.
- Heavy cream: This is what turns the marinara into a creamy sauce.
- Parmesan cheese and fresh basil: For topping. Not required, but they wake the whole dish up.

How to Make Creamy Italian Sausage Tortellini Skillet
Step 1 | Boil the Tortellini
Cook according to package directions, but pull it about a minute before the package says. It finishes cooking in the sauce, and overcooked tortellini turns mushy fast.
Tip: Salt your water (to taste) after bringing to boil to cook your pasta. I throw in a good dash of coarse sea salt.

Step 2 | Brown the Sausage
In a large skillet over medium-high heat, cook the sausage until it’s browned through, breaking it up as it cooks. Don’t rush this step. Those browned bits are where a lot of the flavor comes from.

Step 3 | Combine
Pour the marinara into the skillet with the sausage. Add the drained tortellini and stir to coat.

Step 4 | Add the Cream
Stir in the heavy cream and bring everything to a gentle simmer for 5 to 10 minutes, until the sauce thickens slightly and everything is heated through. Keep the heat at a simmer, not a boil, so the cream doesn’t break.

Step 5 | Serve
Top with grated Parmesan and chopped fresh basil. Serve right away while it’s still creamy.

Variations & Substitutions
- Sauce flavor: This is the easiest way to change up the whole dish without adding a single extra ingredient. A wine-based marinara adds good depth, a spicy arrabbiata brings some heat, a mushroom marinara adds an earthy note, and a roasted garlic sauce leans savory. Whatever jarred sauce you reach for becomes the flavor of the night.
- Use Mild Italian Sausage: I use a spicy for a kick of flavor and my kids love it, but you can always use a mild version.
- Ground Beef: If you have ground beef or chicken that will work well too. I would add a teaspoon or two of Italian seasoning.
- Tortellini style: Any cheese tortellini works here, so feel free to grab whatever your store has. Five-cheese, spinach, or even a mushroom, will all work in this recipe the same way.
- Ravioli: Cheese ravioli works as a swap for tortellini if that’s what you have on hand or prefer.
Gluten free: Use a gluten free tortellini if you can find it. If not, gluten free ravioli is more widely available and works just as well. Check the labels on your sausage and marinara too, since either one could contain gluten, and always double check all labels carefully if you’re cooking for anyone with celiac disease.

- Simmer, don’t boil. Once the cream goes in, keep the heat at a gentle simmer. A hard boil can cause the sauce to separate, and there’s no fixing a broken cream sauce once it happens.
- How to keep your cream sauce from breaking. Beyond just watching the heat, avoid adding cold cream straight from the fridge to a very hot pan. Let it sit out for a few minutes first, or add it gradually while stirring so the temperature change isn’t as sudden.
- Don’t overcook the tortellini. Pull it about a minute before the package says. It finishes cooking once it hits the sauce, and tortellini that’s already fully cooked turns mushy fast in that second round of heat.
- Brown the sausage properly. Don’t rush this step or turn the heat down too soon. Those browned bits stuck to the pan are where a lot of the dish’s flavor actually comes from, so let it get good color before moving on.
What to Serve With Sausage Tortellini Skillet
A side salad is the easiest pairing here, and the good news is you can make it ahead so it’s ready and waiting when dinner is. My Olive Garden copycat salad, Carrabba’s house salad, and Caesar salad all hold up well made the morning or night before, especially if you keep the dressing on the side until serving.
There’s no shame in grabbing a bagged salad mix either, and any of the salads above work just as easily with a shortcut bagged mix if you’re short on time. Either way, a simple side salad rounds out this skillet into a full meal.
Storage, Make Ahead, Freezing
Storage: Leftovers keep in an airtight container in the fridge for up to 3 days.
Make Ahead: Brown the sausage a day ahead and store it in the fridge. When you’re ready to cook, reheat the sausage in the skillet, then continue with the marinara, tortellini, and cream as usual.

Yes. Add a couple of extra minutes to the cook time listed on the package, since frozen tortellini takes a little longer to become tender than refrigerated.
Baby spinach or sliced mushrooms both stir in well during the last few minutes of cooking. Add spinach right at the end so it just wilts instead of overcooking.
It’s best served fresh since the tortellini can get soft if it sits too long in the sauce, but you can have your sausage browned and sauce measured out ahead so the actual cooking only takes about 10 minutes on serving day.
