May is here (can you believe that), and we are starting the month off with a meal plan that covers all the bases. Delicious dinners, quick weeknight meals, and bold flavors that make even a Thursday night feel a little special.

From Monday through Friday, these meals are easy to get on the table. And to finish things off, there is a no-churn strawberry cheesecake ice cream that is the perfect way to welcome the warmer days ahead.

This Week’s Tips for Success

Monday: Instant Pot Baby Back Ribs – If you don’t have an IP try my Oven Baked Ribs
Meal Prep Tip: Season the ribs the night before and refrigerate overnight for even more flavor. The Instant Pot does the heavy lifting, so this one is easier than it looks.
Customization: Finish them under the broiler or on the grill for that caramelized, sticky crust everyone loves.

Tuesday: Taco Casserole with Tortillas
Meal Prep Tip: Brown the meat ahead of time and store it in the fridge so the casserole comes together in minutes on a busy night.
Customization: Top individual servings with sour cream, salsa, or jalapeños. Whatever your family reaches for on taco night works perfectly here.

Wednesday: Big Mac Salad (Burger Bowl)
Meal Prep Tip: Make the dressing ahead and keep it chilled. Cook the beef right before serving for the best texture.
Customization: Load it up with pickles, shredded cheese, and that special sauce, and you will not miss the bun one bit.

Thursday: Southern Fried Pork Chops
Meal Prep Tip: Let the pork chops sit at room temperature for about 20 to 30 minutes before frying for more even cooking.
Customization: Serve with mashed potatoes and green beans for a classic Southern plate, or pair with whatever sides you have on hand.

Friday: Tuscan Grilled Chicken
Meal Prep Tip: Mix up the baste earlier in the day so it’s ready to go. The more you baste while it grills, the better the flavor builds. This recipe can be done on the stovetop and in the oven, too.
Customization: Slice it up and serve over pasta, on a salad, or with crusty bread to soak up all those good juices.

Weekend Treat: Strawberry Cheesecake Ice Cream
Make-Ahead Tip: This no-churn recipe needs at least 6 hours to freeze, so mix it up on the weekend (or the night before you want to serve it), and it will be ready all week long.
Fun Idea: Serve in waffle cones or bowls with fresh strawberry slices on top for a little extra wow factor.
