This White Queso recipe is the one I make when friends are coming over, and I want something easy that everybody loves. Deli white American and Monterey Jack melt into warm cream for a smooth queso blanco dip. It takes one saucepan and 15 minutes, and it’s gone just as fast!

White queso dip served in a cast iron skillet with tomatoes and jalapenos on top.

Every single time we go out for Mexican, I order the white queso dip before I even look at the menu. After one too many bowls of homemade queso that turned grainy or set up like a brick, I made it my mission to figure out what the restaurants know that we don’t. Turns out the secret is simple: white American cheese from the deli counter. It has emulsifying salts built right in, so it melts silky smooth and keeps everything else in the pot smooth right along with it.

From there, I pair it with Monterey Jack (or pepper Jack if you like a little kick) for that mild, buttery flavor, and I melt it all into heavy cream instead of milk so the dip stays rich and pourable. A can of green chiles and a pinch of cumin finish it off, and honey, that’s how you do restaurant-style queso blanco at home.

If you love a good cheesy dip as much as I do, my Ground Beef Queso Dip and Creamy Espinaca Dip are must-makes too, and nothing rounds out a chip spread like a bowl of Restaurant Style Salsa!

Nikki’s Top Tips Before You Start

  • Buy your cheese at the deli counter. Ask for white American and Monterey Jack sliced from the block. Deli-sliced cheese melts faster and more evenly than anything pre-packaged, and it’s the biggest key to a smooth white queso dip.
  • Skip the bagged shredded cheese. Pre-shredded cheese is tossed with anti-caking powder to keep it from clumping in the bag. That same coating keeps it from melting cleanly and leaves your dip gritty. If you can’t get deli slices of Jack, shred it yourself from a block.
  • Keep the heat low once the cheese goes in. Cheese starts to separate around 160°F, so turn the burner down to low before you add the first handful. Never let the pot come back to a boil, or the fats will break out and turn oily.
  • Add the cheese a little at a time. Whisk in one handful of American cheese until it fully melts, then add the next. Rushing it with all the cheese at once is how you end up with clumps sitting in a pool of cream.

White Queso Ingredients

Ingredients needed to make white queso dip.
  • White American cheese: Buy it deli-sliced, not individually wrapped singles. This is the backbone of any good queso blanco cheese dip and the reason it stays so smooth.
  • Monterey Jack or pepper Jack cheese: Adds a mild, buttery flavor and a nice stretch. Get it sliced at the deli or shred it yourself from a block.
  • Heavy whipping cream: Gives the dip its rich body and helps the cheese melt without breaking. Grab a little extra for thinning and reheating.
  • Diced green chiles: One 4-ounce can, undrained. They add mild flavor and those little flecks of green you see in restaurant queso.
  • Ground cumin: A small amount gives the dip that warm, Tex-Mex flavor. Start with ¼ teaspoon and add more to taste.
  • Mexican oregano (optional): It’s more citrusy and earthy than regular oregano. If you don’t have it, just leave it out.
  • Cayenne pepper: Just a pinch for a gentle background warmth.

Heavy cream simmering in a saucepan.

Step 1 | Warm the Cream

Pour the heavy cream into a medium saucepan over medium heat and bring it to a gentle simmer.

Shreds of American cheese added to the heavy cream in a saucepan.

Step 2 | Melt the American Cheese

Turn the heat down to low. Whisk in the American cheese one handful at a time, letting each addition melt completely before adding more.

Pepper jack cheese slices added to the milk and cheese mixture.

Step 3 | Add the Jack

Once the American cheese is smooth, whisk in the Monterey Jack or pepper Jack the same way, a handful at a time.

Green chiles and spices added to the queso mixture in a pan.

Step 4 | Season It

Stir in the green chiles, cumin, Mexican oregano, and cayenne. If it’s thicker than you like, thin it with heavy cream one tablespoon at a time.

Step 5 | Garnish and Serve

White queso dip all mixed together in a pan.

Pour into a serving dish and top with pico de gallo, jalapeños, and cilantro if you like. Serve warm with tortilla chips, or keep it in a crock pot on the warm setting.

White Queso Recipe Variations

  • Try authentic Mexican melting cheeses. Oaxaca cheese and Asadero cheese both melt beautifully if your store carries them. Pepper Jack and Monterey Jack melt just as well and are easier to track down, so those are the ones I reach for.
  • Swap the heavy cream. Half and half or evaporated milk will work in a pinch. The dip will be a little thinner, so let it sit a minute before serving.
  • Make it spicier. Swap the green chiles for 1 to 2 tablespoons of diced jalapeños. Leave the seeds in if you really want to feel the heat.
  • Make it heartier. Stir in browned chorizo or seasoned ground beef for a heartier dip. My Best Taco Seasoning Recipe is perfect for seasoning the meat.
  • Load up the toppings. Spoon pico de gallo, diced tomatoes, sliced jalapeños, or fresh cilantro right on top before serving.

Gluten-Free White Queso Dip

This queso blanco dip is naturally gluten-free, since it’s just cheese, cream, chiles, and spices. Deli American cheese and canned green chiles are usually gluten-free, but brands vary, so check the labels if you’re cooking for someone with celiac disease. Serve it with certified gluten-free corn tortilla chips or fresh veggies.

Recipe Tips

  • Cut the American cheese into strips. Stack the slices and slice them into thin strips before adding them to the pot. Smaller pieces melt quicker, which means less time on the heat and less risk of separating.
  • Rescue a broken queso. If your dip turns oily or grainy, pull the pan off the heat right away. Add a splash of cream and whisk hard until it comes back together, since the extra fat is what re-emulsifies it.
  • Stir it on the warmer. In a slow cooker on warm, give the dip a stir every 20 minutes or so. Add a splash of cream whenever it starts to tighten up.
  • Serve it from a small crock pot. Make the queso on the stove, then pour it into a 1.5 to 2-quart slow cooker set to warm, not low or high. A small crock keeps the dip deep so it stays hot without scorching around the edges.

What to Serve with Queso Blanco Cheese Dip

Tortilla chips are a given, of course! But for a larger spread, set it out next to The Best Guacamole Recipe and a Mexican 7 Layer Dip. If you’re serving it with dinner, spoon it over Carne Asada Tacos, Quick and Easy Skillet Steak Fajitas, or a Chicken Burrito Bowl.

And don’t forget the sides: Elote (Mexican Street Corn) and easy Refried Beans make it feel like a night out, right at home.

Make-ahead & Storage Instructions

Store: Let the white queso cool, then keep it in an airtight container in the fridge for up to 5 days.

Freeze: Freeze cooled queso in a freezer-safe container for up to 3 months. Thaw overnight in the fridge before reheating.

Reheat: Warm it on the stovetop over low heat with a splash of milk or cream, stirring until smooth. You can also microwave it in 30-second bursts, stirring between each.

Make ahead: Make the white queso dip up to 2 days before your party and refrigerate. Reheat gently on the stove, then transfer to a slow cooker on warm for serving.

Frequently Asked Questions

What is the best cheese to use for white queso?

White American cheese from the deli counter is the best base because its emulsifying salts help it melt smoothly without separating. Pair it with Monterey Jack or Pepper Jack for a mild, buttery flavor, or use traditional Mexican melting cheeses like Oaxaca, Asadero, or Chihuahua if you can find them.

How do restaurants make their queso so good?

Many restaurants use processed cheese like white American, and some buy ready-made queso from food service suppliers and just heat it up. Those products contain emulsifiers such as sodium citrate that keep the cheese smooth for hours in a warmer. This recipe uses the same trick, with deli white American melted into cream, so you get that restaurant-style texture at home.

Why is my white queso grainy?

Grainy queso usually comes from bagged shredded cheese or heat that’s too high. Use deli-sliced or block cheese, keep the burner on low, and never let the dip boil once the cheese is in.

Notes

  • Keep the heat low: Cheese starts to separate around 160°F. Once the cheese goes in, keep the pan on low and don’t let it come back to a boil.
  • If it separates: Pull the pan off the heat, add a splash of cream, and whisk until smooth again. The extra fat brings it back together.
  • Cheese prep: Stack the American slices and cut them into strips so they melt faster. Buy the Jack sliced at the deli or shred it yourself from a block. Bagged shredded cheese has an anti-caking coating that makes the dip gritty.
  • Keeping it warm: Transfer to a small slow cooker on warm and stir every 20 minutes or so. Add a splash of cream if it starts to thicken.
  • Storage: Store cooled queso in an airtight container in the fridge for up to 5 days, or freeze for up to 3 months.
  • Reheating: Warm on the stovetop over low heat, or microwave in 30-second bursts. Add a splash of milk or cream and stir until smooth.
