This Week’s Tips for Success
Monday: Slow Cooker BBQ Pulled Chicken
Meal Prep Tip: This makes a good amount of chicken. Use leftovers or make extra for Wednesday’s loaded potatoes.
Customization: Swap in chicken thighs for extra richness, or use a spicy BBQ sauce if your house likes heat.
Tuesday: Kale Crunch Salad
Meal Prep Tip: Massage and chop the kale and cabbage ahead, but keep the dressing and almonds separate until serving so nothing goes soft.
Customization: Add Tuscan grilled chicken to turn this from a side into a full dinner.
Wednesday: Loaded BBQ Baked Potatoes
Customization: No chicken left? Pulled pork or chopped brisket work just as well on top.
Thursday: Grilled Summer Vegetable Pasta Salad
Meal Prep Tip: Grill the vegetables and cook the pasta the night before, then toss everything together right before serving.
Customization: Add grilled chicken or shrimp if you want more protein in the bowl.
Friday: Crockpot Italian Meatballs with Sauce
Meal Prep Tip: Mix and roll the meatballs the night before and keep them in the fridge so all you have to do on Friday is load the slow cooker.
Customization: Serve over spaghetti, tuck into toasted sub rolls with melted mozzarella, or spoon over creamy polenta.
Dessert: Strawberry Shortcake Ice Cream Sundae
Meal Prep Tip: Prep the strawberries and crumble ahead so this comes together in minutes.
Customization: Swap in your favorite ice cream flavor or add a drizzle of chocolate.
