If you are trying to get dinner on the table without losing your mind, you are in the right place. Every Thursday, I drop a fresh weekly meal plan with five weeknight dinners, a dessert, and tips to help you prep ahead and make each meal your own. Looking to get ahead or need more ideas? Browse all my weekly meal plans or come say hi on my about page.
These are recipes I actually cook and trust, and I have been putting this plan together every single week for years. New here or a regular, the goal is always the same. Good food, less stress, more time for everything else.

This Week’s Tips for Success
Monday: Slow Cooker Roast Beef Debris Recipe
Meal Prep Tip: Start it in the morning and come home to dinner done. It reheats beautifully, so leftovers the next day are just as good.
Customization: Serve po’boy style on crusty French bread with mayo and pickles, or spoon it over mashed potatoes or fries.
Tuesday: Crock Pot Salsa Verde Chicken
Meal Prep Tip: Place the chicken in the crock pot insert the night before, cover and refrigerate, then add the salsa verde and seasonings in the morning before turning it on.
Customization: Use it for tacos, burrito bowls, nachos, or wrapped up in a flour tortilla with cheese and sour cream.
Wednesday: Instant Pot Beef Tips
Meal Prep Tip: Coat the beef tips in flour and seasonings the night before and store them covered in the fridge. Shaves time off an already quick dinner.
Customization: Serve over slow cooker mashed potatoes, egg noodles, or rice. Stir in sliced mushrooms if you want a little extra depth.
Thursday: Chicken and Bacon Pasta with Spinach and Tomatoes
Meal Prep Tip: Cook the bacon and slice the chicken ahead of time. Thursday night, you are just pulling it all together and boiling pasta.
Customization: Any short pasta works here. Swap spinach for baby arugula or leave it out if someone at your table is not a fan.
Friday: Shrimp Salad Sandwich
Meal Prep Tip: Make it the night before. The flavor gets even better after a few hours in the fridge, and Friday dinner basically takes care of itself.
Customization: Serve on toasted brioche buns, croissants, or spoon it over lettuce to skip the bread. A little extra Old Bay on top never hurts.
Each meal plan includes five dinner recipes the whole family will love, with a nice variety to keep things interesting. Add a side dish or salad, and you have a complete meal!
