Summer has a way of making everything feel a little more relaxed, and that includes dinner. Whether you’re firing up the smoker, pulling out the slow cooker, or just trying to get something on the table before the kids scatter, this week has you covered from every angle.

There’s a little something for everyone this week, and yes, dessert definitely counts as a highlight. Grab your plan, do a quick grocery run this weekend, and you’ll be set up for a really good week ahead.

This Week’s Tips for Success

Monday: Smoked Pork Belly Burnt Ends
Meal Prep Tip: These are actually perfect to make on Sunday and reheat Monday night. Once they come off the smoker, let them cool completely, then store them in an airtight container in the fridge. To reheat, pop them in the oven at 350 degrees for about 15 to 20 minutes, or toss them back in a foil pan with a little extra sauce and warm them low and slow on the grill or smoker. They hold up beautifully, and honestly, the sauce gets even better after a day in the fridge.
Customization: Prefer more heat? Add a pinch of cayenne to your rub. Want it sweeter? A little extra brown sugar in the glaze goes a long way.

Tuesday: Walking Tacos Recipe
Meal Prep Tip: Brown the taco meat ahead of time and store it in the fridge. At dinnertime, just reheat and set everything out so everyone can build their own bag.
Customization: Swap the beef for ground turkey or chicken if you prefer. Any flavor of chips works, but Fritos and Doritos are always a crowd favorite.

Wednesday: Crock Pot Chicken Parmesan Penne Pasta
Meal Prep Tip: Add everything to the slow cooker insert the night before and refrigerate it. In the morning, just pull it out, let it come to room temp for a few minutes, and start cooking. Customization: Use your favorite jarred marinara to keep it simple, or add a pinch of red pepper flakes if your crew likes a little kick.

Thursday: Cajun Jambalaya Pasta Recipe
Meal Prep Tip: Chop your onion, bell pepper, and celery ahead of time and store them together in the fridge. That trinity of veggies is the heart of the dish, and having it ready makes the whole thing come together fast.
Customization: Adjust the Cajun seasoning to your heat preference. You can also swap the sausage for chicken thighs or add shrimp for a surf and turf version

Friday: Homemade Sloppy Joes
Meal Prep Tip: This comes together quickly. But the meat mixture can be made two to three days ahead and stored in the fridge.
Customization: Pile them on classic hamburger buns, or serve over baked potatoes for something a little different. Great with coleslaw on top too.

Dessert: No Bake Key Lime Pie in a Jar
Meal Prep Tip: Make these at the start of the week and store them in the fridge. They need at least two hours to set, but taste best when they’ve chilled overnight.
Customization: No key limes? Regular lime juice works great, or I love Nellie and Joe’s Key Lime Juice. You can also swap the graham cracker crust for crushed vanilla wafers for a fun twist.
