This is one of those recipes my family always gets excited about. It’s one I can practically make in my sleep because it’s so simple and dependable. It’s mostly hands-off and yields tender, flavorful ribs with very little effort. Perfect for busy days or a relaxed Sunday supper.

Over the years, we’ve (my hubby and I) tweaked our rib rub to get it just the way we like it, and it’s what gives these ribs their flavor. It’s the first thing everyone notices after that first bite.

  • Country-Style Pork Ribs: Look for ribs cut from the pork shoulder (often labeled shoulder ribs). They should be thick, meaty, and have some fat—this keeps them tender as they cook. Boneless or bone-in both work.
  • Rib Rub: Use my homemade dry rib seasoning blend or your favorite. Don’t be shy here, coat the ribs generously and press it in so it sticks. This is where a lot of your flavor starts.
  • BBQ Sauce: Use a sauce you love since it really comes through in the final dish. Sweet, smoky, or a little spicy all work well. You can use store-bought to keep things simple. We love KC Masterpiece Original. It is a little sweet with a bit of heat and is also gluten-free.

How To Make Oven-Bake Country Style Pork Ribs

Step 1 | Prep the Ribs, Line Baking Sheet & Preheat Oven

Line a large rimmed baking sheet (about 12 x 17) or roasting pan with foil. For smaller batches, use a 9×13 pan.

Pat the ribs dry with paper towels and place them on a lined baking sheet.

Season generously on all sides with rib rub, pressing it gently into the meat.

Let them sit at room temperature for 30 minutes while the oven preheats.

Step 2 | Preheat the Oven

Preheat oven to 275°F.

Step 3 | Cover and Bake

Cover the baking sheet tightly with foil.

Bake for about 2 hours, or until internal temperature reaches 190–200°F.

(Time will vary depending on thickness.)

Step 4 | Check for Tenderness

Carefully remove from the oven and check that the ribs are fork-tender.

If not, re-cover and bake another 20–30 minutes.

Step 5 | Add Sauce and Finish Baking Uncovered

Return to oven, uncovered, and bake for 15–20 minutes, until caramelized. Internal temp should reach 200–205°F.

For extra caramelization, broil for 3–5 minutes.

Step 6 | Rest and Serve

Let rest 5–10 minutes before serving.

Serve with green beans, baked potatoes, or your favorite sides.

Slow Cooker Instructions For BBQ Country Ribs

  1. Pat the ribs dry and season well with rib rub.
  2. Spread ½–¾ cup BBQ sauce in the bottom of the slow cooker.
  3. Add ribs (stack if needed).
  4. Top with another ½–¾ cup BBQ sauce.
  5. Cook: LOW: 8–10 hours (best) or on HIGH: 5–6 hours.

To Caramelize:

  • Transfer ribs to a foil-lined baking sheet
  • Discard liquid
  • Brush with more BBQ sauce
  • Broil 3–6 minutes until bubbly and caramelized

Let rest before serving.

Easy Swaps and Substitutions

  • Use your favorite store-bought rub as a shortcut, or make my blend ahead, and keep it on hand.
  • Try different BBQ sauces (sweet, smoky, spicy).
  • Add a splash of apple juice or broth before baking.
  • Finish on the grill instead of broiling for smoky flavor.

  • Choose shoulder ribs for the most flavor and tenderness. You want some fat; this keeps the ribs juicy. Look for country ribs that are about the same size so they cook evenly.
  • Plan for about 3 pounds per 4 servings.
  • Smaller ribs cook faster, larger ones take longer.
  • Always cook covered first to keep moisture in so they don’t get tough.
  • If halving the recipe, use a smaller pan so the ribs stay nestled in the juices.

Ingredients 

  • 6 pounds country style pork ribs - this should be a pork shoulder “rib”
  • cup homemade rib rub - or to taste (coat generously on both sides)
  • 1 ½ – 2 cups BBQ sauce - or to taste

Instructions 

  1. Line a large rimmed sheet pan (I use a 12 x 17 pan) or roasting pan with aluminum foil. If you are making a smaller amount of ribs use a smaller pan or 9X13 pan.
  2. Pat the ribs dry with paper towels and place on the line baking sheet. Season all sides generously with rib rub. Then lightly press the rub into the ribs.
    Let sit at room temperature for 30 minutes while the oven preheats.
  3. Preheat the oven to 275℉.
  4. Cover the pan tightly with foil (you want to be sure the steam stays trapped inside so the ribs do not dry out).
  5. Bake for about 2 hours or the internal temperature should read about 190-200℉. The time will depend on the size and thickness.
  6. Carefully remove the pan from the oven. These ribs will render a lot of liquid, so be careful not to spill. Place on a flat surface and remove the foil. Check to be sure they are fork tender. If not, re-cover with foil and cook for an additional 20 to 30 minutes.
  7. Drain the pan liquids into a bowl to discard.
  8. Brush the ribs on all sides generously with BBQ sauce. Return to the oven uncovered and bake for 15-20 minutes, until the sauce is caramelized. The internal temperature should read about 200-205℉.
  9. To get extra caramelization, turn the oven to broil for 3-5 minutes additional minutes, keeping an eye on them so they don’t burn.
  10. Remove the ribs from the oven and let rest for 5-10 minutes.
  11. Enjoy. We love them with green beans, baked potatoes, or mashed potatoes.

GLUTEN-FREE BBQ COUNTRY RIBS:

For a caramelized finish, transfer ribs to a foil-lined baking sheet, brush with additional BBQ sauce, and broil for 3–6 minutes until bubbly. Let rest before serving.
