Memorial Day has a way of sneaking up fast, and before you know it, the long weekend is winding down, and Tuesday is knocking at the door. The good news is, this week is built for exactly that transition, from cookout mode straight into a week of dinners that are laid back, satisfying, and actually easy to get on the table.

The week after a long weekend always needs a little grace, and that is exactly what this meal plan delivers. Nothing overcomplicated, nothing that is going to have you stressed at 5 o’clock, just good, solid dinners that feel a little special without a lot of fuss. Pull up the plan, pick your days, and let’s make this week a good one.

This Week’s Tips for Success

Monday: Honey Chipotle BBQ Wings
Meal Prep Tip: Make the honey chipotle sauce up to 3 days ahead and store it in the fridge. When you are ready, just light up the grill.
Customization: Dial back the chipotle for a milder wing, or add a pinch of cayenne if your crew likes the heat turned up.

Tuesday: Tex-Mex Chicken Noodle Casserole
Meal Prep Tip: Use a rotisserie chicken to cut down on prep time. You can also assemble the entire casserole the night before, cover it, and refrigerate until you are ready to bake. Customization: Swap the chicken for ground beef or ground turkey, or add a can of black beans for extra heartiness.

Wednesday: Burrata Caprese Salad
Meal Prep Tip: Slice the tomatoes and prep your basil ahead of time, but wait to add the burrata and balsamic until right before serving so everything stays fresh and pretty. Customization: Add sliced avocado, a handful of arugula, or some prosciutto to make this a more substantial plate. We also love this with Tuscan grilled chicken, or a Rotisserie if you want a protein with it.

Thursday: Classic Egg Salad
Meal Prep Tip: Hard boil your eggs up to 5 days in advance and store them unpeeled in the fridge. The egg salad itself keeps well for 2-3 days, making it a great make ahead option. Customization: Serve it on croissants, toast, lettuce wraps, or crackers. You can also mix in a little dill, paprika, or diced pickles to make it your own.

Friday: Baked Reuben Sandwich Sliders
Meal Prep Tip: Assemble the sliders earlier in the day and keep them covered in the fridge. Pop them in the oven when you are ready, and they will be hot and melty in about 20 minutes. Customization: Not a fan of sauerkraut? Swap it for coleslaw for a milder flavor. You can also use turkey instead of corned beef for a lighter version.

Dessert: Red White and Blue Poke Cake
Meal Prep Tip: This cake is actually better made a day ahead. The Jello has time to set and the flavors really come together overnight in the fridge.
Customization: Use any combination of red and blue gelatin flavors you like. Strawberry and berry blue is a classic, but cherry and grape work great too.
